Honey roasted butternut squash and puy lentil salad

This dish makes a hearty winter salad thats full of nutrients or it can be a perfect side dish to a main course. The delicious sweet and chewy honey roasted butternut squash goes perfectly with the slight crunch from the pumpkin seeds. A tasty combination with the creamy goats cheese and puy lentils. The butternut squash can be roasted in simple chunks or in lovely crescent shaped slices for a quirkier presentation. Go a step further and roast the butternut with garlic cloves, fresh thyme and rosemary leaves for a winter earthiness. Great served with crumbled blue cheese and toasted chopped walnuts to!

For something with a little more kick scatter the butternut squash with a tsp chilli flakes!

Ingredients

  • 1 small butternut squash, peeled, deseeded & chopped
  • 1tbsp olive oil
  • 2tbsp honey
  • 400g tin puy lentils, drained and rinsed
  • 75g soft goats cheese
  • 100g spinach leaves
  • 3tbsp pumpkin seeds

Method

  1. Pre-heat oven to 190°C/375°F/Gas Mark 5. Place the butternut squash on a large baking tray, season well and toss in the olive oil. Roast for 20 mins before drizzling with the honey and returning to the oven for a further 10 mins until tender.
  2. Toss gently with the puy lentils and goats cheese. Serve on a bed of spinach and scatter with the pumpkin seeds

Pasta with Butternut Sauce, Spicy Sausage and Baby Spinach

Spicy chicken sausage is the perfect compliment to this creamy pasta dish made with butternut squash, baby spinach, parmesan and a touch of sage. It’s filling and comforting on a chilly winter night.

Since making Spaghetti with Creamy Butternut Leek Sauce[1] a few weeks back, I am officially hooked. I love how the butternut squash feels like a decadent creamy sauce without the need for heavy cream. And with the addition of parmesan and hot sausage, the end result is savory and delicious.

I am also loving Giada’s new line of organic pastas sold at Target. I’m picky with my pasta and love the taste and texture of this pasta when cooked al dente. I always go for unusual pasta shapes, here I used a shape called casarecce… love!

As part of the Target Inner Circle, I got to meet Giada in person a few weeks ago at Fun and Fit in the City. Isn’t she beautiful!
She was so sweet in person, I also got an autographed cookbook and a goody bag full of her new food products sold at Target. My favorites were of course the organic pastas. I tried a few shapes, but plan on going back to Target to try the whole wheat.

Pasta with Spicy Sausage, Baby Spinach and Creamy Butternut Sauce

Ingredients:

  • 11 oz (4 links) spicy chicken Italian sausage
  • 1 lb butternut squash, peeled and diced
  • 1 tbsp light butter
  • 10 oz casarecce, or pasta of your choice 
  • 1/4 cup shallots, minced
  • 3 cloves garlic, minced
  • 2 cups baby spinach, roughly chopped
  • 2 tbsp fresh shaved parmesan cheese
  • 4 sage leaves, sliced thin
  • kosher salt and freshly ground black pepper, to taste

Directions:

Bring a large pot of salted water to a boil. Add butternut squash and cook until soft. Remove squash with a slotted spoon and place in a blender, blend until smooth.

Add pasta to the boiling water and cook according to package directions for al dente, reserving at least 1 cup of the pasta water before draining.

Meanwhile, in a large deep non-stick skillet, sauté sausage over medium heat until browned, breaking up with a spoon as it cooks. When cooked through, set aside on a plate.

Reduce heat to medium-low and melt the butter, sauté the shallots and garlic until soft and golden, about 5 – 6 minutes. Add pureed butternut squash, season with with salt and fresh cracked pepper and add a little of the reserved pasta water (I used about 1 cup) to thin out the sauce to your liking. Add baby spinach and stir in parmesan cheese and sage.

Toss in cooked pasta and sausage and mix until well coated.
Serve with additional parmesan cheese on the side if desired.

Makes about 6 cups.

This recipe can be doubled up and prepared in advance or frozen in individual portions. If you have trouble getting your children to eat vegetables cut them into smaller dice and most won’t know they are there.

Ingredients

  • 4 onions, peeled and finely chopped
  • 4 small courgettes, cut into 2.5cm dice
  • 2 small peppers, cored and cut into 2.5cm squares
  • 300g butternut squash, peeled and cut into chunks
  • 2 large leeks, cut into discs, optional
  • 2 garlic cloves, peeled and crushed
  • 450g pre-cooked lasagne
  • Grated pumpkin seeds
  • 70g plain flour
  • 2tbsp olive oil
  • 80g butter
  • 250g cheddar cheese
  • 1tsp mustard
  • 8 tbsp tomato paste
  • Ground salt and pepper, to season
  • 2 x 400g canned chopped tomatoes
  • 1.2lt (1200ml) milk
  • 600ml water or vegetable stock

Method

  1. Preheat the oven 180°C/350°F/gas 4. Grease a deep ovenproof dish, or individual dishes with a little oil.
  2. In a frying pan add the onions, courgettes, peppers, butternut squash, leeks and garlic in the remaining oil for a few mins, then add the herbs, tomatoes, tomato puree, seasoning and water or stock. Bubble for 10-15 mins.
  3. To make the sauce, place butter, flour, milk and mustard in a small saucepan and whisk continuously over medium heat until the sauce begins to boil and thicken. Turn down the heat to its lowest and let the sauce cook for 2 mins. Add the grated cheese, 1/4 of the white sauce, and 1/3 third of the vegetable mixture. Sprinkle in 1/3 of the remaining cheese and follow this with a single layer of lasagne sheets. Repeat this process, ending up with a final layer of sauce and a good sprinkling of cheese and the pumpkin seeds for added crunch.
  4. Cook in the oven for 25-30 mins or until golden and bubbling.
