80 g of digestive biscuits
80 g of sugar
350 g of spreadable cheese
125 ml of white yogurt g of sugar
200 g of fresh or frozen berries

Method

To prepare this fresh and tasty sweet with berries you start by putting i in a pot berries and sugar and cooking them for about three minutes. While they are cooling down, you need to finely chop the Biscuits with the help of a kitchen mixer and create a cream with spreadable cheese e yogurt (with the addition of a spoonful of sugar).
One is then created in containers – preferably of glass – one base with the biscuits, pour the cream and then add the cold berries. The sweet it must then be cooled and can be kept in the fridge for up to two days. You can also add a little grain of hazelnuts.

Ricotta and berries cake

Ingrediants

300 g of cottage cheese
3 eggs
150 g of corn starch g of spreadable cheese
100 ml of fresh cream
150 g of powdered sugar
350 g of fresh or frozen berries g of sugar
Salt to taste
white wine to taste

Method

Start preparing the cake with ricotta and berries separating the egg whites from the yolks, keeping the first courses aside and whipping the second courses until they become foamy. Then join the cream and a spoonful of white wine and corn starch, mixing well. Then add the ricotta and mix the ingredients until you get a homogeneous mixture. Finally join the egg whites beaten until stiff and powdered sugar.

In a kitchen mixer, chop the i berries, adding 30 g of corn starch and another 30 g of powdered sugar. In a buttered pan pour the mixture with the corn flour and then stuff it with sprinkled berries. Bake the cake in the oven at 170 degrees for about 30 minutes.

Panna cotta with berries with caramel

Ingrediants

500 ml of fresh cream
8 g of gelatin in sheets
800 g of granulated sugar
450 g of fresh or frozen berries
lemon juice
water
fresh mint

Preparation

Between sweets with berries panna cotta is certainly among the best and simple to do. The preparation of this dessert starts with cooking the berries. Just heat them in one pot for a few minutes with the sugar and let them cook until they are soft. The mixture will then be passed through a sieve to eliminate the seeds.

In another pan, then heat the cream with the sugar until the latter is completely dissolved, remove the mixture from the heat and add it to the preparation with the berries and the wet and squeezed gelatin sheets. Stir and pour the panna cotta in the mold, leaving it to cool in the fridge for at least six hours.

For the caramel decoration, melt 150 g of caster sugar in the water and – when the caramel has reached a golden color – remove it from the heat and pour it onto a sheet of parchment paper. Leave him cool down completely and then break it with your hands or with a spoon.

Before serving the panna cotta with berries garnish with the caramel pieces and a few fresh mint leaves.

Recipe Rabbit with berries


  • 600 g 4 rabbit legs
  • 125 g currants
  • 125 g raspberries
  • 125 g blackberries
  • 125 g blueberries
  • 4 small spring onions
  • sage
  • butter
  • garlic
  • onion
  • dry white wine
  • extra virgin olive oil
  • salt
  • pepper

For the recipe rabbit with berries, deboned the thighs and keep the scraps. Set the pulp aside and brown the scraps in a saucepan with a drizzle of oil and a pinch of salt for 5-6 minutes. Turn off and filter to obtain a sauce.
Brown the rabbit legs in a pan with a drizzle of oil, turning them on all sides, for 3-4 minutes. Season with salt and pepper and then add a small knob of butter, 1 clove of garlic and sauté for another minute.
Gradient with 1/2 glass of wine and put everything in a baking dish; add the rabbit sauce and bake at 200 ° C for 15-20 minutes perfuming with a few sage leaves.
Cut 2 onions and brown them quickly in a pan with a small knob of butter and a pinch of salt. Season the red fruits in the same pan, moving them gently so as not to break them too much.
Serve the legs with red fruits and spring onion.

Around the mid-1980s, the explosive London bartender Dick Bradsell he thought of combining gin, lemon juice, sugar syrup and a special blackberry liqueur to create a new drink with intriguing fruity notes. Thus was born the Bramble, a cocktail that over time would later become part of the great classics of international mixology. And so in this strange summer 2020 Bombay Sapphire has decided to pay homage to that lucky experiment of more than three decades ago, launching on the market in these weeks a new and colorful proposal: Bombay Bramble, or a special gin characterized by the infusion of blackberries and raspberries.

A gin with berries

Yeah, but what is this Bombay Bramble like? The color is an intense burgundy, tending to purple, and is obtained – as the company strongly emphasizes – exclusively fromfruit infusion, without the addition of artificial colors. On the nose, the scent of wild berries is particularly intense, and yes, it could slightly annoy the most rigorous connoisseurs of gin, accustomed to breathing in the scents of juniper berries and all the others botanical present in the distillate. But we are still faced with a deliberately alternative product, sought after in its playful and casual nature. This can be clearly felt when tasting pure, where in the first instance all the distinctive notes of the more classic Bombay emerge, followed only later by those – however very evident – of the red fruits.

The new version of the Bramble

In short, the latest Bombay Sapphire proposal is presented in all respects as a cheerful summer variant of its gin, designed to be enjoyed on a sunny terrace inside a good cocktail, with a side dish of a fine tonic and plenty of ice. We can, for example, think of using it to give a bitter-sweet boost to the more classic Gin Tonic. Or, alternatively, propose it in a 2020 version of that Bramble that gave it its name, following the recipe below. The suggested retail price for the new Bombay Bramble is € 16.90.

Bramble 2020

Ingredients:
5 cl of Bombay Bramble
2.25 ml of fresh lemon juice
3.20 ml of sugar syrup (2: 1 ratio)

seal:
1 slice of lemon
2 blackberries
1 raspberry

Method:
Pour all the ingredients into a glass.
Mix everything with a bar spoon.
Break the ice and then pour it into the glass
Garnish with lemon, blackberries and raspberries and serve.
