The Christmas log … but the easy one! – Italian Cuisine


This dessert is a must for Christmas holidays: we offer it in a different version, made of panettone!

The Christmas log is a classic party dessert made of biscuit and chocolate dough. Today, however, we offer it in a new version: it is a different way of bringing the panettone, but also an idea of recycling when the holidays are over. It is a dessert that may seem very difficult in appearance, but in reality it is prepared in a few minutes and with very few ingredients. The great figure is insured!

The recipe for the panettone Christmas log

To prepare the panettone cake you have to cut some slices in section, not too thin, nor too thick, about 2 cm.
Roll out a sheet of cling film on one floor and arrange six slightly overlapping slices to each other to form a rectangle, then three above and three below.
With a rolling pin roll them out a little and then wet them with milk or coffee or with a liqueur of your choice between rum and alchermes.
Separately prepare the cream by mixing 350 g of cow's ricotta well sifted, with 4 spoons of sugar is 100 g of dark chocolate chips.
Spread the cream on the panettone base and then roll up on the short side. The roll must be long.
Help yourself to wrap it using plastic wrap. Close it well e put it in the refrigerator for an hour.
Once firmed, cover it with one chocolate ganache prepared by melting 200 g of dark chocolate in about 100 ml of hot cream.
Pour everything on the roll, wait for the ganache to solidify a little and then put everything away in the freezer for at least 2 hours.

How to decorate the stub

First, make the ganache really look like it bark of a trunk.
When it is still hot, therefore, work it with the teeth of a knife for draw veins.
Then add some Christmas details like red berries and leaves.
You can use i fresh currants, or the sour cherries and then the marzipan leaves or the fresh mint.

Other fillings

The socket it can be stuffed in many ways.
Ricotta and chocolate it's the simplest idea to implement, but you can really indulge yourself.
For example, you can add gods marron glacé crumbled, or you can alternatively prepare a cream with cream, mascarpone and hazelnut cream if you don't want to cook anything.
For a very classic version, instead, try the custard, but it must be quite compact and in this case keep the log in the refrigerator.
