Pandoro zuccotto or dome of stars? – Italian Cuisine


A magical party cake that will come in handy even if you have some pandoro to recycle

The Zuccotto Of Pandoro it is a very elegant and scenographic dessert, but at the same time easy to prepare.
It seems a dome of stars and it is beautiful to serve during the holidays, a different idea to bring the pandoro to the table or a way to recycle at finished parties.

How to make the dome of stars

The peculiarity of this dessert is the zuccotto shape made with many Pandoro slices cut in section that look like stars.
Use one mold for zuccotti or a round salad bowl with a rounded bottom and coated with transparent film.
Then cut the pandoro in section to obtain slices of about 2 cm and use the smaller slice, that is, the top one, to make the top of the zuccotto.
Place it in the center of the mold with the dark part facing you so that once turned upside down you can see the light side.
Then cut the other slices into two parts and try to make match the tips of the stars so as to cover all empty spaces.

Mascarpone and raspberry cream

What we propose to complete the zuccotto is one semifreddo cream, sweet, but with a sour aftertaste given by raspberries which will also be a nice surprise when you cut the zuccotto into slices. A touch of red is always there for Christmas!
To prepare it you have to assemble it with electric whips same amount of cream and mascarpone, then 300 g of cream and 300 g of mascarpone, with 100 g of icing sugar. Then add gods well washed raspberries and dry yourself and gods chocolate shortbread or coarsely crumbled wafers, about 100 g.
Fill the pandoro base with this cream and close everything with other slices without leaving empty spaces.
Cover with plastic wrap and let the cake rest in the freezer for 3 hours. At least thaw it 30 minutes before serving, of course upside down!

Does Pandoro Go Wet?

It depends a little on the result you want to achieve and on the type of preparation you have in mind.
To make the zuccotto as we proposed it, it is not necessary, but if you want to bring to the table a refrigerator dessert such as a tiramisu for example, then a wet lightly of the slices is necessary, but do not overdo it because you risk breaking the pandoro slices which are very spongy. What can you use? Coffee, barley, milk or tea.
