For the classic chocolate pudding recipe, heat the milk and bring it to a boil. Melt the butter with the sugar in another saucepan, then mix in the flour and cocoa, sifting them. Dilute the mixture with the milk, pouring it a little at a time, to prevent lumps from forming. Bring back to the fire and cook for 4-5 minutes after boiling.
Turn off the heat, add the finely chopped chocolate, stirring until it has melted. Pour the pudding into a mold brushed with rum. Tap it on the work surface to prevent air bubbles from forming, cover it with aluminum foil and let it cool. Store it in the fridge for at least 4 hours. Turn it out by quickly dipping the mold into hot water.
