Ciambotta is a vegetable-based dish typical of Puglia. There is no real recipe, as ciambotta was born as a poor dish for fishing families, who cooked together different varieties of fish and seafood (heads, sea bass, prawns, cicadas, etc…) with tomatoes , water and a green pepper, subsequently also prepared in an exclusively vegetable version.
