The "Woman for Made in Italy", this year, is Alessia Zucchi. «Our commitment as a company is not only to promote a correct approach to sustainability issues, but also to spread one conscious oil culture, able to enhance the excellence of our territory while respecting biodiversity and work ethics ", explained Alessia Zucchi, who has led the company for two years. "Seeing this commitment recognized is immense satisfaction, and can only be the drive for the whole Zucchi team to continue working in this direction".

For Alessia Zucchi and her company, this is it the third recognition in a few weeks: the oil mill has been selected among the ten virtuous examples of Why Italy is definitely alive and kicking, promoted by The European House – Ambrosetti, and has also joined the award-winning companies Coop for future – Together for a good expense, conferred by Coop Italia.

The oil mill was born in 1810: it was a family-run artisan business dedicated to extracting oil from seeds for food use. Over the years, the plant has become increasingly modern and the olive oil line has been introduced to complement that of seed oils. The oil mill gave birth to first disciplinary of Sustainability Certification of the entire chain of extra virgin olive oil, guaranteed by the Csqa certification body.

In this way a chain of excellence is guaranteed, traceable and based on respect for the environment, on proper economic recognition of work, on workers' rights. Over the years, the oil mill has also introduced new ones measures to limit the environmental impact of production, for example through the reduction of the carbon footprint, the construction of a cogeneration plant and a rail link for the movement of goods, and, again, the reduction of water consumption.

Traditional recipes, but also those that come from experimentation and contamination: the dishes created by our food testers with Zucchi oils range from first courses to desserts, from fries to sauces. With enthusiasm and curiosity, our food testers put Zucchi oils to the test to try out the different flavors and the different yields for the types of cooking.

Extra virgin olive oil, sunflower seed oil and organic flaxseed oil: these are the three Zucchi oils whose characteristics and peculiarities we wanted to test by putting them to the test with our food testers. A selection of readers of our fan base, cooking enthusiasts, received Zucchi products and used them for their own recipes at home. We asked them to try all three oils in their dishes and tell us about the results: the differences in the raw flavors, the best combinations, the results of their use during cooking and the recommended recipes.

The result? Really amazing!

It has a round and structured taste, with delicate notes of almond and artichoke. It gives the best if used raw, to season fresh dishes like pinzimoni, carpaccios and salads, or more rustic like soups and soups, but also to embellish a grilled meat or fish.

Apparently simple, the recipe has lent itself perfectly to test the organoleptic properties of the oil. Federica wanted to underline how "the raw oil has perfectly balanced all the aromas without overlooking the particular delicacy of this side dish".

Roberta loves simple dishes but with genuine flavors. We understood this when he told us that he had tested Zucchi 100% Italian sustainable evo oil to season rice salad, cold pasta, buffalo mozzarella accompanied by cucumbers and cherry tomatoes, salad and pesto trofie. The taste has agreed everyone, even his children!

Cold dishes also for Elena, who tested Zucchi 100% Italian sustainable evo oil to prepare wholegrain croutons with cream of cannellini beans, grilled zucchini and vegan tzatziki. Go ahead and then use vegetables, which have turned into a tantalizing dish thanks to a little imagination and the use of the 100% sustainable Zucchi sustainable Italian olive oil. Among the “detox” recipes, Elena tested a tomato cream with a carrot, a clove of red Tropea onion and a bunch of aromatic herbs, enriched with chopped toasted rye bread with basil and 100% Italian sustainable extra virgin olive oil Zucchi. Marta was a bit skeptical about her tests because she used to use the oil that is produced by some friends. He prepared a carrot cream that he served lukewarm with creamed salt cod croutons and a curl of grilled pepper in the center. Maria Loide tested the 100% Italian Zucchi sunflower seed oil for some traditional dessert recipes, and in particular the Abruzzi scrippelle that were fried using sunflower oil. Federica fries little, and has confessed to us that the reason for this choice depends very much on the fact that she is often not satisfied with the oil yield in fries. In both cases Federica was struck by the fact that the taste of the oil in no way covered the flavor of her recipes. In addition to meatballs, Federica also used sunflower oil as a base for the accompanying mayonnaise, basil and lime, and told us that it was a real success.

A fancy condiment that he used to embellish a robiola of which he is greedy, while Elisabetta used it as a real seasoning to give that extra touch to quinoa and chickpea salads and vegetable couscous instead of spices.

Marta got her hands done for us and made bread!

Passionate about baking, Marta wanted to change her habits by replacing the extra virgin olive oil with Zucchi organic linseed oil. And it seems that he will never come back! He confessed to us that "the oil helped to mix the ingredients well and made the bread crunchy outside and very soft inside and the flax flavor was really intense: I usually use extra virgin olive oil also in the preparation of bread whole or with cereals, but from now on I will always prepare it with linseed oil! ".
