Creamy Bay Scallop Spaghetti – An Almost Perfect Post-Holidays Pasta

After all those rich, complicated, and time-consuming holiday recipes, I’m always craving something light, fast, and easy; and this creamy bay scallop spaghetti is all that and more. Literally “more,” in that this is not light, but quite delicious, and in roughly the time it takes you to boil spaghetti, the sauce should be just about ready.


With some similar recipes to this, the chef will have you remove the scallops as soon as they’re seared, to be added back right at the end. Sounds smart since these little mollusks only take a few minutes to cook, but I think it’s a mistake. Yes, the scallops will be smaller and firmer using my method, but the trade-off is a much more flavorful sauce.

Sometimes cooks are so afraid to overcook and ruin something, they never extract as much flavor as possible. Sure, if you boiled these bay scallops another ten minutes or so, they’d get start getting dry and rubbery, but here they’re still plenty tender and moist enough, and I think you’ll agree the sherry sauce benefits significantly.


Regarding the sherry wine: If you can’t have or don’t want to use it, you’re on your own with replacements. While this would probably still work with none, or any number of sort-of-sweet, sort-of-acidic substations, I make mine with sherry, so I can’t tell you what will happen if you stray.

The meat’s another story. Feel free to switch out the scallops with any cubed protein, so really, if you think about it, I just shoed you like a dozen new recipes. You’re welcome! I really hope you give this a try soon. Enjoy!


Ingredients for 4 appetizer-sized portions:
1 tbsp vegetable oil
1 pound bay scallops
2 tbsp butter
3 cloves garlic, minced
2 tsp lemon zest
pinch red pepper flakes
1/3 cup sherry wine
1 cup heavy cream
salt and pepper to taste
juice of 1 lemon or to taste
8 oz cooked thick spaghetti
2 tbsp Italian parsley, divided
Parmigiano-Reggiano to taste

Raspberry Frozen Yogurt

My grocery store was out of my usual brand of vanilla yogurt so I grabbed a different brand. It’s flavor was a bit too tart for my liking so I decided to try to make a very basic and simple frozen yogurt out of it. I didn’t want to dig out my ice cream maker, so I just blended some fresh raspberries then strained them to remove the seeds. I mixed it with the yogurt and added agave syrup until it tasted sweeter. I froze it in a tupperware container for 4-5 hours and then served it to my kids for an extra special after school snack. I topped the frozen yogurt with mini chocolate chips and they loved it! Both kids gave this frozen yogurt two thumbs up and said it was blog worthy.

Place the raspberries into a blender then pulse until well combined. Pour the raspberries into a strainer over a bowl to remove all of the seeds. Combine the strained raspberries with the yogurt. Add the agave, to taste, then stir until well combined. Place into a freezer proof tupperware then seal with the lid. Place into the freezer for 4-5 hours. Scoop frozen yogurt into a small bowl and top with chocolate chips or chocolate syrup, if desired. Enjoy.

Raspberry Frozen Yogurt

Total Time: Freeze 4-5 hours



Ingredients:

2 cups of fresh raspberries
32 oz vanilla yogurt
Agave syrup, to taste (depending on the tartness of the berries & yogurt)

Directions:

Place the raspberries into a blender then pulse until well combined. Pour the raspberries into a strainer over a bowl to remove all of the seeds. Combine the strained raspberries with the yogurt. Add the agave, to taste, then stir until well combined. Place into a freezer proof tupperware then seal with the lid. Place into the freezer for 4-5 hours. Scoop frozen yogurt into a small bowl and top with chocolate chips or chocolate syrup, if desired. Enjoy.

Skillet Mexican Zucchini

This zucchini is incredibly delicious with a little bit of a Mexican kick from the jalapeno then topped with melted queso blanco. It’s also easy and quick, a must try!

I’m a bit of a cookbook addict. It’s a problem as I’m running out of room in my home for all my books, bu that never stops me from buying new ones. But the biggest problem is that I kind neglect them. But this weekend I was thumbing through the Aaron Sanchez’s cookbook Simple Food, Big Flavor[1] who is also one of the judges on Chopped (one of my favorite shows) and I came across his Mexican recipe for zucchini. I can’t get enough of zucchini in the summer, in fact I have an entire Pinterest Board devoted to skinny zucchini called Yummy Zucchini[2], so I decided to test this out…

You MUST try this! I only made a few tweaks using less oil, and and rather than making a cilantro pesto, I added Garden Gourmet cilantro paste and minced pickled jalapeno for kick. It totally exceeded my expectations.

Ingredients:

  • 1 garlic clove, finely chopped
  • 1 tbsp extra virgin olive oil
  • 1 lb zucchini, diced
  • 1 large tomato, cored, seeded and diced
  • 1 green onion, thinly sliced
  • 1 tbsp minced fresh cilantro or Garden Gourmet cilantro paste
  • 1 tsp minced pickled jalapeño
  • 1/2 cup crumbled queso blanco
  • fresh lime juice, to taste
  • salt, to taste
  • freshly ground black pepper, to taste

Directions:

Cook
the garlic in oil in a large skillet over medium heat 1 minute,
stirring until sizzling. Add zucchini and cook stirring occasionally,
about 3 minutes or until slightly softened. Add the tomato and green
onion and cook about 3 minutes.

Remove skillet from heat and add
cilantro paste, jalapeño and lime juice. Season with salt and pepper to taste
and top with queso blanco. Serve hot.
