While the pasta cools, prepare the pea cream blending the cooked peas with a little extra virgin olive oil, salt and pepper until you get a smooth cream. In a large bowl, mix the pasta with the pea creamthe ricotta and the coarsely chopped walnuts.

Cut the onion, carrot, celery and potato into coarse pieces. Place all the vegetables in a large pot with a liter of water and bring to the boil. Reduce the heat and leave to simmer for 30-40 minutes. Filter the broth. Heat a spoonful of extra virgin olive oil in a pan.

Bring a pan of salted water to the boil to cook the pasta. Finely chop the onion, garlic and parsley. Cut the ham into thin strips. In a pan, heat a drizzle of extra virgin olive oil, add the chopped onion and garlic. Fry over medium heat until golden.
