Ingredients

210 g of 00 flour
40 g of bitter cocoa
an egg and a yolk
150 g of sugar + a spoon
70 g of butter
a glass of whole milk
4 yellow kiwis
half a sachet of baking powder
a lemon
a pinch of salt

Method

Peel the kiwis and cut them into slices. Add a few drops of lemon juice and a spoonful of sugar and set aside.
Melt the butter and let it cool.
Separately, whisk the eggs with the sugar until the mixture is light and fluffy.
Add the melted butter and then gradually the 00 flour and the cocoa sifted alternating them with the milk of which you will leave a finger aside.
Melt the yeast in the little remaining milk and add it to the dough.
Finally add the grated lemon zest, the salt, the liquid released by the kiwis and mix everything well.
Grease a 26 cm diameter pan and pour the mixture into the pan.
Arrange the kiwis vertically making them sink into the dough.
Bake in a hot oven at 180 ° C for about 50 minutes.
Do the toothpick test to check its cooking before taking it out of the oven and, once ready, let it cool completely before serving.

Ingredients: 8 tortillas, 3 chicken breasts, 2 red peppers, 1.5 ml of tomato sauce, 6 drops of Tabasco (or finely chopped chilli pepper), 1 can of corn, 2 Zespri Green kiwis, 2 red onions, 1 bunch coriander, 1 lime, olive oil, pepper, salt

Preparation: Cut the chicken breasts into strips and brown them in a pan with a spoonful of oil. Season with salt and pepper and set aside. In the same pan, add two more spoons of oil and fry one of the onions and the two peppers, all done in strips, for about 10 minutes, stirring often. Season with salt and pepper and put the chicken strips in pans, add the tomato puree and Tabasco and cook for another two minutes.
Chop the remaining onion together with the lime juice, half a glass of water, a pinch of salt and pepper and the chopped coriander, to form a thick sauce.

Ingredients: 3 boneless chicken breasts, 1 onion, 2 garlic cloves, 1 or 2 lemons, 1 teaspoon of brown sugar, 1 tablespoon of sesame seeds, 100 ml of white wine or water, 1 teaspoon of minced cumin, 1 bunch of parsley, 1 bunch of coriander, 4 loaves of pita bread or Mexican (cornmeal) tortillas

For the sauce: 2 Zespri SunGold kiwis, ½ mango, ½ lime juice, ½ tender onion, 2 tablespoons of olive oil, 1 bunch of fresh coriander, salt

Preparation: Peel the garlic cloves and the onion. Wash the parsley and coriander and separate the leaves from the stalks.
Cut the chicken into pieces of the same size and place them in an ovenproof dish.

In the mixer bowl put the onion, garlic, sugar, wine, sesame, cumin, parsley and coriander leaves, salt, lemon juice and a little grated lemon zest. Chop everything, pour the sauce over the chicken and turn over so that the seasoning is distributed. Stop the baking dish and leave to marinate in the fridge for 3 or 4 hours.

Remove the meat from the marinade sauce and put the pieces of chicken on the wooden skewers, previously moistened with water.

Heat a plate or a pan, brush with oil and cook the skewers about 3 minutes per side.

For the sauce: Peel the kiwis and mango and cut into very small cubes. In a bowl, mix them with the lime juice, olive oil, onion and chopped coriander. Serve the skewers with the sauce and the type of bread you prefer.
