Bolognese Sauce – Hip Hip Hazan!

This bolognese sauce is dedicated to the late, great
Marcella Hazan, who passed away in September, at the age of 89. She was
considered the Julia Child of Italian food, and at a time when most Americans
though “bolognese” was spaghetti sauce with chunks of hamburger it, Marcella
taught us just how magnificent this meat sauce could be.


One thing that always surprises people making this recipe
for the first time is the absence of garlic. Hazan railed against the common
belief that garlic should be added to any and all Italian recipes. She once
wrote, “the unbalanced use of garlic is the single greatest cause of failure in
would-be Italian cooking,”
and “Garlic can be exciting when you turn to it
sporadically, on impulse, but on a regular basis, it is tiresome.”

Would a few minced garlic cloves ruin this incredibly
delicious pasta sauce? Probably not, but since this is supposed to be something
of a tribute, I decided to remain true. Speaking of ingredients, I used ground
beef here, but I’ve also done this with cubed chuck roast, which works
wonderfully as well.


Anyway, I really hope you give this classic bolognese a try,
and if you do, and there’s some extra wine around, please raise a glass, and
toast the “Nonna” of Italian cuisine in America. Enjoy!


Ingredients for 6 portions:
1 tbsp olive oil
2 tbsp butter
1 cup finely diced onions
1/2 cup finely diced celery
1/2 cup finely diced carrot
1 1/2  tsp salt,
or to taste
freshly ground black pepper and cayenne to taste
1/8 tsp ground nutmeg
1 1/2 lb ground beef
1 1/2 cups milk
2 cups white wine
1 can San Marzano plum tomatoes (28-oz), about 3 cups
2 cups water, or as needed

Crock Pot Picadillo

Picadillo, a flavorful Cuban dish made with ground beef and a sauce made from simmering tomatoes, green olives, bell peppers, cumin, and spices is one of my family’s favorite weeknight meals.

Trust me on this one, if you want a recipe the whole family will love, this is it! I grew up on this dish and my friends used to love eating over when my mom made it for dinner. This was probably one of the first recipes I ever learned how to cook and I make it at least once a month, although usually on the stove. (stove top version here[1]) It’s inexpensive, kid-friendly, freezer friendly and gluten-free.

I knew this would adapt nicely for the slow cooker, and I was right! In fact, I think it’s even better since the lean beef cooks longer and becomes very tender the longer it simmers.

This makes a lot, so you’ll get several meals out of it. We serve it
over brown rice, we make tacos with the leftovers, and I am going to
post a second recipe using the leftovers. Don’t you love a recipe that
can serve as two different meals!

Anytime you use ground beef in the crock pot, you’ll need to brown it first on the stove. Since the skillet is already out, I threw the onions, peppers and garlic in with the meat to let the flavors bloom.

If you want to prep this the night before, the meat is fully cooked, so you can add all the ingredients into the crock pot, then refrigerate. The next morning plug it in and go to work, or go on with your day. When you come home, you’ll just have to make some rice and a salad and dinner is ready!

By the way, lean beef is the meat of choice for this dish in my house, but you can also use lean bison or ground turkey if desired. Raisins are commonly added to this dish, but we prefer this without.

Ingredients:

  • 2 1/2 lbs 93% lean ground beef
  • 1 cup minced onion
  • 1 cup diced red bell peppers
  • 3 cloves garlic, minced
  • 1/4 cup minced cilantro
  • 1 small tomato, diced
  • 8 oz can tomato sauce
  • 1/4 cup alcaparrado (manzanilla olives, pimientos, capers) or green olives
  • 1 1/2 tsp ground cumin
  • 1/4 tsp garlic powder
  • 2 bay leaves
  • kosher salt and fresh pepper, to taste

Directions:

Brown meat in a large deep skillet on medium-high heat; season with generously with salt and a little pepper. Use a wooden spoon to break the meat up into small pieces. When meat is no longer pink, drain all the liquid from pan. Add the onions, garlic and bell peppers to the meat and cook an addition 3-4 minutes.

Transfer the meat to the slow cooker, then add tomato, cilantro, tomato sauce, 1 1/4 cups water, alcaparrado (or olives) [I usually add some of the brine from the jar for added flavor] then add the spices.

Set slow cooker to HIGH for 3 to 4 hours or LOW for 6 to 8. After it’s ready, taste for salt and add more as needed [I added a little more cumin and garlic powder at the end as well since the crock pot tends to mute the flavors of herbs and spices]. Discard the bay leaves and serve over brown rice.

Makes about 5 3/4 cups.

Serve this with 3/4 cups brown rice for an 8 point meal and a salad on the side.

Cheeseburger Casserole

If you’re a cheeseburger lover, and the thought of ground beef,
tomatoes, pickles and cheese tickles your fancy, then this truly
American, comforting casserole is for you!

I was recently given the Bobby Deen: From Mama’s Table to Mine[1]
cookbook as a gift. Bobby, in case you’re not familiar is Paula Deen’s
son, who makes his Mama’s Southern dishes a bit healthier and on the
lighter side.

Whenever I get a cookbook, I usually attempt a dish that’s out of my norm. A cheeseburger casserole… now that’s not a dish I grew up eating!

What the heck is a cheeseburger casserole? Think cheeseburger essential ingredients such as lean ground hamburger meat sauteed with diced tomatoes, onions, a touch of mustard, and some not-so common burger ingredients such as pasta, all topped with melted cheddar and finished off with diced pickles.

My toddler gobbled this up, and I thought it was pretty darn good – and I would certainly make this again. I’m sure you can have fun with this and add your favorite cheeseburger toppings. I’m thinking sauteed mushrooms would be really good here too and maybe a few bacon crumbles for a bacon cheeseburger casserole (why not!).

The one thing I changed was the serving size, I thought 9 servings was a little more realistic than 12 for adults, and at about 260 calories (7 points plus if you’re on Weight Watchers) it’s still well under 300 calories.

ingredients

  • 2 cups (6 oz) uncooked rotini pasta (use brown rice pasta for GF)
  • 2 tsp oil
  • 1 1/2 cups onions, finely chopped
  • 1 garlic clove, finely chopped
  • 1 lb lean ground beef (95% lean)
  • 3/4 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp tomato paste
  • 28 oz diced tomatoes
  • 2 tbsp Dijon Mustard
  • 2 cups reduced fat grated cheddar cheese
  • 1/4 cup chopped dill pickles

Directions:

Preheat the oven to 350 degrees. Spray a 9 x 13 inch baking dish with cooking spray. In a large pot of boiling salted water, cook the pasta according to the package directions for al dente and drain well.

In a large skillet, heat the oil over medium-low heat. Add the onions and cook until soft, about 5 minutes. Stir in the garlic and cook for 30 seconds. Stir in the beef and cook until browned; season with salt and pepper. Stir in the tomato paste, then add the tomatoes and mustard. Let the mixture bubble gently until it is slightly thickened, about 2 minutes.

Toss the meat mixture with the pasta and spread it into the prepared dish. Top with the cheddar and bake until the cheese is melted, about 15 minutes. Sprinkle the chopped pickles over the top and serve. Makes about 9 cups.
