Ingredients

150 g of brie
80 gr of sliced ​​speck
1 pack of rectangular puff pastry
1 renetta apples
honey to taste

Method

Turn on the oven at 220 degrees. Take the puff pastry from the fridge, spread it on a baking tray and prick it with the prongs of a fork, then cover it with the brie cut into thin slices.

Wash, peel and cut the apple into thin slices and put them on top of the brie. Take the slices of speck, cut them into strips and cover the surface of the sheet. Finish everything with a drizzle of honey, bake for 15 minutes and serve hot.

Someone gave me this idea last week after posting my mini pecan pies and I just loved it! You see I’m a huge fan of baked brie, so naturally creating baked brie a bit lighter with better portion control sounded very appealing to me.

Trader Joe’s sells a light Brie which is what I used here, Presidente also carries one. For the topping, I thought using dried cranberries would be pretty for this time of year and I used honey as my glue to keep everything in place. And the taste? Just as good as the real thing, just be sure you don’t eat the whole tray!

A wedge of brie would be enough to make two batches, so if you are serving a crowd, you can easily double this recipe.

Ingredients:

  • 3 oz light brie, skin removed cut into (15) 1/2-inch cubes
  • 4 tbsp craisins
  • 4 tbsp chopped walnuts or pecans
  • 2 tbsp honey
  • 15 Mini Phyllo Shells (Athens)

Directions:

Preheat oven to 325°F.

Combine craisins, chopped nuts and honey in a bowl and mix well.

Arrange mini shells on a baking sheet. Fill
mini shells with cheese (each piece of cheese weighs about 0.2 oz). Top with sticky craisin/nut mixture and bake 5-7 minutes, or until the cheese melts.

Serve immediately.

Since it has been so hot here recently we have been having a lot of smorgasbords[1] for dinner. Usually a rotisserie chicken or deli meats with veggies, fruits, cheese, olives, pickles, etc. Last night I decided to switch it up a bit and served these crostinis with our smorgasbord. I love the flavors and textures of this simple appetizer – buttery creamy cheese on a toasted piece of bread with a sweet & spicy jelly on top. These tasty crostini disappeared very quickly and my daughter, who normally doesn’t care for cheese, gobbled up several of them and has decided this is a new favorite.

Preheat the oven to 400 degrees. Slice the baguette into thin slices then place on a baking sheet. Bake for 4-5 minutes or until light golden brown. Spread a bit of brie on each toast and top with a dollop of Spicy mango jam. Serve immediately and enjoy.

Ingredients:

Small baguette, sliced thinly
Brie cheese
Spicy mango pepper jelly (or any other spicy jam you prefer)

Directions:

Preheat the oven to 400 degrees. Slice the baguette into thin slices then place on a baking sheet. Bake for 4-5 minutes or until light golden brown. Spread a bit of brie on each toast and top with a dollop of Spicy mango jam. Serve immediately and enjoy.
