Fava beans and chicory recipe, the Apulian recipe


  • 600 g chicory
  • 300 g dried hulled beans
  • slices of homemade bread
  • extra virgin olive oil
  • salt

To prepare the recipe of beans and chicory, soak the dried beans in water for 8 hours.
rinse under running water, then boil them in lightly salted water for about 1 hour.
drain and blend them together with a pinch of salt, oil and a little bit of the cooking water.
Peel and boil the chicory in slightly salted boiling water. Drain and squeeze it.
serve chicory with mashed beans, completing with raw oil to taste and slices of lightly toasted homemade bread.

Spaghetti with green beans, tomato and tuna recipe


  • 350 g spaghetti
  • 350 g tomatoes
  • 150 g green beans

To make spaghetti with green beans, tomato and tuna, peel the tomatoes and cut them into small pieces, collecting them in a bowl with the juice they will release. Then mix them with the crumbled tuna. Heat 4 tablespoons of oil with a whole garlic clove, a sprig of chopped parsley and a chilli pepper to taste; then remove the garlic and pour the oil on the mixture of tuna and tomatoes. Boil the beans very al dente, drain them with a slotted spoon keeping their water on the fire, and divide them in two lengthwise: they will acquire the ideal thickness to pair with spaghetti. Put them back in their boiling water together with the spaghetti and salt. Finally, drain the pasta with the green beans and season with the mixture of tuna and tomatoes.

Recipe Pasta beans and mussels with scampi


  • 1 kg mussels
  • 12 prawns
  • 600 g boiled cannellini beans
  • 350 g mixed pasta
  • vegetable broth
  • 1 cloves of garlic
  • 1 chilli pepper
  • parsley
  • tomato sauce
  • White wine
  • pepper
  • extra virgin olive oil

To prepare pasta with beans and mussels with scampi, clean the mussels well.
Chop the chilli with garlic and parsley, fry in a pan with a drizzle of oil, in this sauce brown the prawns for 2 minutes, then blend with two fingers of wine.
Take away the prawns and in the same pan put the mussels and let them open with the lid.
Shelled half the prawns, the others leave them whole and crush the heads in the sauce to give more flavor.
Shelled mussels, keep some whole to decorate the dishes. Filter all the sauce and pour it over the molluscs so they stay hydrated and do not dry out.
saute the beans in a pan with a drizzle of oil, sprinkle with the mussel sauce and 4 tablespoons of puree.
Bake the pasta directly into the sauce, with a little broth, at the end add the shelled mussels and before serving also add the scampi and mussels with the shell.
