First of all, prepare the short pastry (if you use my recipe, a half dose should suffice), cover with plastic wrap and let it rest in the refrigerator for at least 30 minutes.
Take the dough and spread it on the lightly floured work surface in a sheet of about 1 centimeter.
With a 7 cm pastry cutter cut the biscuits, place them a little apart on the baking sheet covered with parchment paper and cook for about 20 minutes in a convection oven preheated to 180 ° C.
Once well cooked and browned, take the biscuits out and let them cool.
Meanwhile prepare the royal icing by mixing egg white, icing sugar and a few drops of lemon juice.
At this point you can start decorating your cookies.
Pour some icing on each cookie (it should not be too homogeneous, because it serves to simulate melted snow).
Add a marshmellow (press a little to attach it well with the biscuit glaze) which will be the snowman's head, then add the other elements of the snowman: chocolate drops for the eyes, orange sugars for the nose, smarties for the buttons , pieces of licorice for arms and hands.
Allow to harden at room temperature for about 1 hour.
The snowman cookies are ready.
