First, clean the shrimp by peeling them completely (here the guide to find out how to do it).

Cut the bread into small cubes (as I did, or crumble some breadcrumbs).
Wash the tomatoes, dry them and cut them in half (or into 4 parts, if they are larger).
Turn on the oven at 180 °.

Place the prawns on the bottom of a baking tray lined with parchment paper, season with salt and pepper, then arrange cherry tomatoes on top (with the cut side down), pine nuts, breadcrumbs and rosemary.
Drizzle with a little oil, then cook for about 20 minutes in a preheated convection oven at 180 ° C.

The Mediterranean prawns are ready, add some fresh rosemary and serve immediately.
