Crab meatballs they are a real delight. Perfect for any occasion, in my opinion they are particularly suitable for the party table precisely because they are simple to make and nice to serve, as well as delicious, despite their refinement. If you are still in the process of defining the New Year's Eve menu, for example, they could be a great addition to your New Year's Eve table;)
They will in fact be my new entry in the starters category in fact since these crab and sea urchin meatballs, during the menu tests, went like hot cakes 🙂
First wash the potatoes, put them to cook in cold water, bring to a boil and boil for at least 35 minutes or until they are well cooked and soft, then peel and mash them while they are still hot.
Sauté with garlic, oil and parsley, then add the crab meat first and after a couple of minutes also the sea urchin, season and remove the garlic.
Add the mashed potatoes, let them cool, then add the egg, season with salt and create the meatballs, then pass them in the breadcrumbs.
Heat a little oil in a pan, then cook the meatballs by browning them well on all sides until golden brown, then drain and let them dry on kitchen paper.
The crab balls are ready, serve them immediately.
