Ingredients
- 250 g milk
- 250 g cream
- 125 g flour
- 125 g blueberries
- 100 g butter
- 60 g caster sugar
- 4 eggs
- a vanilla bean
- icing sugar
- salt
For the Brussels gaufres recipe, heat the milk with the half-opened vanilla pod, then let it cool. Separate the yolks from the whites and beat the egg whites with a pinch of salt. Collect the flour, 20 g of granulated sugar, the soft butter and the 4 egg yolks in a bowl; add the milk without the vanilla and, lastly, the egg whites.
Pour the mixture into a rectangular mold (13 × 8 cm) and cook the gaufres for 5 minutes. Cook the blueberries in a saucepan for 10 minutes with 40 g of granulated sugar and 70 g of water to obtain a syrup; whip the cream with a tablespoon of icing sugar. Sprinkle the gaufres with icing sugar, complete with whipped cream and blueberry syrup; serve immediately, hot.
