Pot Sticker Dipping Sauce

I had some frozen pot stickers in my freezer to use up so I paired them with some Chinese soup and Soy Sesame Edamame[1] for dinner. I didn’t have any dipping sauce in my refrigerator so I decided to make up a batch. This took less than 5 minutes to make and tasted fantastic… I will never buy store bought sauce again! My whole family thought it was delicious.

Combine the soy sauce, rice vinegar, water, brown sugar, green onion, minced garlic, ginger, sesame oil, and sriracha sauce together in a small bowl; whisk until well combined. Cover and set aside for at least 30 minutes for the flavors to mingle. Serve as a dipping sauce for pot stickers, egg rolls, or wontons. Enjoy.

Pot Sticker Dipping Sauce

Cook Time: 30 min. for flavors to mingle

Total Time: 35 min.



Ingredients:

1/4 cup of soy sauce
2 tbsp rice vinegar
1/4 cup of water
2 tsp sugar
1 tbsp green onions, diced
1 clove of garlic, minced
1/4 tsp fresh ginger, minced
2 tsp sesame oil
1/4 tsp sriracha, optional

Directions:

Combine the soy sauce, rice vinegar, water, brown sugar, green onion, minced garlic, ginger, sesame oil, and sriracha sauce together in a small bowl; whisk until well combined. Sesame Green Beans with Mushrooms and Chestnuts

I wanted something light and simple to serve with an Asian inspired meal I was making for dinner.  I found this recipe on Taste of Home[1] that I adapted to suit my tastes.  It was a very quick side dish to make and it was so delicious.  I loved the combination of flavors and textures and we all thought the sauce was delicious.

Preheat the olive oil and sesame oil in a large skillet over medium high heat. Add the mushrooms to the HOT pan and let them sit for 2 minutes before flipping them to brown on the other side for 2 minutes. Add the minced garlic, green beans, and water chestnuts; season with sea salt and freshly cracked pepper. Cook, stirring constantly, for 1 minute. Combine the water, soy sauce, sugar, sea salt and freshly cracked pepper, to taste; mix well.  Pour the sauce into the pan and cook the green bean mixture for 3-4 minutes, or until the green beans and tender-crisp.  Remove from the heat and serve with sesame seeds sprinkled on top. Enjoy.

Sesame Green Beans with Mushrooms and Chestnuts




Yield: 4

Prep Time: 10 min.

Cook Time: 10 min.

Total Time: 20 min.



Ingredients:

5 oz button mushrooms, sliced
2 tsp canola oil
2 tsp sesame oil
3/4 lb of green beans, ends trimmed
1 small can of sliced water chestnuts (liquid drained)
2 small cloves of garlic, minced
2 tbsp water
4 tsp soy sauce
2 tsp sugar
Sea salt and freshly cracked pepper, to taste
Sesame seeds

Directions:

Preheat the olive oil and sesame oil in a large skillet over medium high heat. I was craving Asian food so I went in search of some recipes online.  I found this tasty chicken dish at Barefeet In The Kitchen[1] that looked irresistible. I adapted the recipe to use what I had on hand and we all loved it!  I toned down the sriracha in the sauce itself so it wouldn’t be too spicy for our kids.  My husband and I drizzled some extra sriracha on top of our individual servings to give us an extra bit of heat.  I served this chicken with steamed jasmine rice and the Sesame Green Beans with Mushrooms and Chestnuts[2] for a delicious and healthy meal.

Season the chicken with sea salt and freshly cracked pepper, to taste. Sprinkle the cornstarch on top of the chicken, tossing it to coat it evenly. Set aside. Prep the vegetables and place them in a second mixing bowl next to the chicken. In a small bowl, stir together the honey, soy sauce, vinegar, and sriracha sauce. Set aside.

Warm both oils in a large skillet over medium high heat. When the oil is hot, add the chicken and toss to coat in the oil. Saute while stirring constantly for 4-5 minutes until lightly browned. Add the vegetables and cook, stirring constantly for another 3-4 minutes, until the vegetable are just softened.

Stir in the cashews and then pour the prepared sauce over the skillet. Toss well to coat well and then increase the heat to high for just a minute or so. The sauce should thicken slightly and stick to everything in the skillet. Remove from heat and toss to coat everything evenly with the sauce. Serve with steamed rice. Enjoy!

Sriracha Honey Cashew Chicken

Ingredients:

3 boneless skinless chicken breasts, cut into 1/2″ pieces
2-3 tbsp cornstarch
Sea salt and freshly cracked pepper, to taste
1 tbsp olive oil
1 tbsp sesame oil
1 medium head of broccoli, cut into small florets
1 sweet yellow onion, chopped
Several stalks of asparagus, wooden ends removed sliced into thirds
1 red bell pepper, chopped
2 cloves garlic, minced
1/2 cup dry roasted unsalted cashews
3 tbsp honey
2 tbsp soy sauce
1 tbsp rice vinegar
1 tsp Sriracha hot sauce (more for extra spice)
