A delicious dark chocolate spiral: here is our recipe for brioche rolls
The brioche rolls I am a dessert much loved by young and old, easy to prepare and ideal for a snack or breakfast. With our recipe you will prepare soft chocolate-flavored swivels: in this case, we have filled the brioche swirls with dark chocolate, but you can also use a hazelnut spread.
Chocolate brioche rolls: delicious recipe
Ingredients for 6 swivels
500 g Flour 0
175 g Milk
100 g Butter
100 g Dark chocolate
75 g Granulated sugar
15 g Brewer's yeast
2 eggs
2 egg yolks
2 Spoons of rum
10 g Salt
Zest of one lemon
1 Teaspoon of cinnamon
Method
To prepare the chocolate brioche rolls, start mixing 100 g of flour with the crumbled yeast and 75 g of milk in a bowl, until you get a homogeneous mixture. Let it rest for an hour covered with a clean cloth.
In the jug of the mixer, mix the remaining flour and sugar, then add the rest of the milk, 1 egg, egg yolks, lemon zest, cinnamon and rum. Begin to knead, then add the first leavened dough and salt; then add the softened butter and knead well for at least 10 minutes, until the dough is completely homogeneous and elastic. Let it rest for an hour and a half covered with a cloth. Meanwhile, melt the chocolate in the microwave.
Turn the dough over onto the lightly floured work surface and roll it out with a rolling pin very gently, until you get a rectangle of 40 cm by 30 cm. Keeping the long side in front of you, ideally divide the rectangle into three equal parts and, starting from the left, spread the two thirds of the rectangle with chocolate. Fold the dough into portfolios, starting from the third without chocolate, and roll out again with a rolling pin very gently.
Cut out six strips lengthwise and roll them up on themselves. Place them well apart on a baking sheet lined with parchment paper, brush them with 1 beaten egg and let them rest covered for about 40 minutes. Preheat the oven to 180 degrees and cook for about 30 minutes. The brioche rolls are freshly baked and ready to be enjoyed!
