A delicious dark chocolate spiral: here is our recipe for brioche rolls

The brioche rolls I am a dessert much loved by young and old, easy to prepare and ideal for a snack or breakfast. With our recipe you will prepare soft chocolate-flavored swivels: in this case, we have filled the brioche swirls with dark chocolate, but you can also use a hazelnut spread.

Ingredients for 6 swivels

500 g Flour 0
175 g Milk
100 g Butter
100 g Dark chocolate
75 g Granulated sugar
15 g Brewer's yeast
2 eggs
2 egg yolks
2 Spoons of rum
10 g Salt
Zest of one lemon
1 Teaspoon of cinnamon

Method

To prepare the chocolate brioche rolls, start mixing 100 g of flour with the crumbled yeast and 75 g of milk in a bowl, until you get a homogeneous mixture. Let it rest for an hour covered with a clean cloth.

In the jug of the mixer, mix the remaining flour and sugar, then add the rest of the milk, 1 egg, egg yolks, lemon zest, cinnamon and rum. Begin to knead, then add the first leavened dough and salt; then add the softened butter and knead well for at least 10 minutes, until the dough is completely homogeneous and elastic. Let it rest for an hour and a half covered with a cloth. Meanwhile, melt the chocolate in the microwave.

Turn the dough over onto the lightly floured work surface and roll it out with a rolling pin very gently, until you get a rectangle of 40 cm by 30 cm. Keeping the long side in front of you, ideally divide the rectangle into three equal parts and, starting from the left, spread the two thirds of the rectangle with chocolate. Fold the dough into portfolios, starting from the third without chocolate, and roll out again with a rolling pin very gently.
Cut out six strips lengthwise and roll them up on themselves. Place them well apart on a baking sheet lined with parchment paper, brush them with 1 beaten egg and let them rest covered for about 40 minutes. Preheat the oven to 180 degrees and cook for about 30 minutes. The brioche rolls are freshly baked and ready to be enjoyed!

  • 300 g clean mixed mushrooms
  • 150 g a chicken thigh
  • 120 g sausage
  • 100 g milk
  • 40 g instant polenta
  • 8 vine leaves

Heat 200 g of water with milk and a small pinch of salt; when it boils, add the polenta flour and cook for about 8 '.

Chop the onion, stew it in a thin layer of oil, with a bay leaf and mushrooms for 1 '; add 1/2 teaspoon of concentrate, pepper and blend with 2-3 tablespoons of wine. Add the rolls, wet them with a little water, cover and cook for 7 '. Serve with mushrooms and polenta.

First prepare the milk cream: pour the milk into a saucepan, add the sugar and vanilla and bring to a boil, then add the cornstarch and the butter and continue to mix until you get a smooth and thick cream.
Pour the cream into a larger bowl, cover with cling film and let it cool.

When the cream has cooled, take the pastry, spread it out on the work surface (on its parchment paper), then proceed as follows: with the blade of a knife, divide the sheet in half vertically and then into 3 parts in the direction horizontal; at this point, in the center of the 3 strips of dough obtained, create vertical cuts leaving 1 cm of dough intact at the edges (above and below the cuts).
Finally, fold the external parts of the dough (those without cuts) towards the center, until the cuts are covered, without however overlapping the 2 side parts.

You will end up with 6 rectangles of puff pastry for each roll: stuffed with cream and black cherry (or nutella), then close each rectangle by bringing 2 of the corners to the center of the long side of the rectangle, so that there is a triangle.

Seal the edges well and arrange the bundles on the baking sheet lined with parchment paper, brush with a little milk, then bake for about 20 minutes at 180 ° C, in a preheated ventilated oven

The puff pastry bundles with milk are ready: let them cool, decorate with icing sugar and serve.
