Heirloom Caprese Salad

I recently picked up some beautiful heirloom tomatoes and decided to keep it simple and make a caprese salad with them. I drizzled the tomatoes and mozzarella cheese with good olive oil then seasoned with sea salt and freshly cracked pepper. I drizzled the top of the salad with balsamic vinegar right before serving. It was not only a beautiful summer salad it was absolutely delicious too. We all loved it and gobbled it up within minutes of setting it on the dinner table. I have a feeling this will be included in our dinner again this week.

Slice tomatoes and mozzarella cheese. Layer tomatoes and cheese in a spiral on your serving plate. Drizzle with good olive oil then season with sea salt and freshly cracked pepper, to taste. Top with small whole basil leaves then drizzle balsamic vinegar right before serving. Enjoy!

Heirloom Caprese Salad




Yield: 4

Total Time: 10 min.



Ingredients:

Heirloom tomatoes
Fresh mozzarella cheese, sliced
Fresh basil leaves
Extra Virgin Olive oil, to taste
Sea salt and fresh cracked black pepper, to taste
Balsamic vinegar, to taste

Directions:

I love recipes that have few ingredients but turn out so amazingly delicious. Simple recipes always seem to be the best ones to me. This salad was on the table within five minutes and we all loved it. I loved the combination of flavors and textures – the crisp cucumbers with the juicy tomatoes, and creamy mozzarella with the tart and sweet balsamic vinegar. I served this salad with the Lemon Chicken Thighs and the Roasted Cauliflower with Fresh Herbs, Parmesan, and Lemon. This salad will be a regular on our table because it’s healthy, easy, and we all loved it.

Combine the balsamic vinegar and olive oil together; mix well. Combine the cucumbers, tomatoes, and mozzarella cheese together in a bowl. Season with sea salt and freshly cracked pepper, to taste.  Drizzle the top of the salad with the balsamic vinaigrette on top. Serve. Enjoy.

Cucumber, Tomato, Mozzarella Salad with Balsamic




Yield: 4

Total Time: 5 min.



Ingredients:

2 tbsp balsamic vinegar
1 tbsp olive oil
3 mini (Persian) cucumbers, sliced
10-11 cherry tomatoes, sliced
4-5 Bocconcini (small balls of mozzarella cheese), sliced
Sea salt and freshly cracked pepper, to taste

Directions:

Combine the balsamic vinegar and olive oil together; mix well. Combine the cucumbers, tomatoes, and mozzarella cheese together in a bowl. Season with sea salt and freshly cracked pepper, to taste. Drizzle the top of the salad with the balsamic vinaigrette on top. Serve. Enjoy.

Caprese Panini with Basil Mayonnaise

My favorite sandwich is from a little restaurant in McCall, Idaho called Bistro 45. It’s a caprese panini with basil mayonnaise and it’s unbelievably wonderful. This sandwich is made from simple ingredients and they work together beautifully. I decided to make it for our lunch today and it tasted amazing. The only way this sandwich would be better is if I could have used freshly picked garden tomatoes.  I am looking forward to tomato season and making this delicious sandwich again.

Combine the mayonnaise, 1 tablespoon of basil, sea salt and freshly cracked pepper,to taste, together in a small bowl. Mix until well combined. Set aside.

Preheat your panini grill or a grill pan over medium heat.

Spread some of the basil mayonnaise on the bread then layer it with a little mozzarella, tomato slices, some of the remaining chopped fresh basil, and a little more mozzarella. Season with sea salt and freshly cracked pepper, to taste. Place the other slice of bread on top. Place into your panini pan (or grill pan). Cook for 5 minutes or until crispy and golden brown. Serve immediately. Enjoy!

Side Note:  I always cook my paninis dry.  I find that using oil or butter on the bread makes the sandwich too greasy.  Try it – I bet you will like it and it’s way better for you!

Sea salt and freshly cracked pepper, to taste
4 slices of French bread
Mozzarella cheese, sliced
Tomatoes, sliced
1 tbsp fresh basil, chopped

Directions:

Combine the mayonnaise, 1 tablespoon of basil, sea salt and freshly cracked pepper,to taste, together in a small bowl. Mix until well combined. Set aside.
