Sausage Stuffed Zucchini Boats

Hope you all had a happy July 4th!! With zucchini season in full bloom, I thought I would revive this from the archives – one of my absolute favorites!! Enjoy!!

Summer zucchini hollowed out and stuffed with lean Italian sausage, then topped with marinara and cheese.

OMG! You guys are going to love these!

I’ve had this concept in my head for a while, but now that zucchini is in full season and my friend gave me some fresh from her garden, I put my idea to the test. The results were simply amazing, thumbs up all around, especially from my picky teen!

One boat fills me up, but you can enjoy two and still be in good shape. I love Polly-O part-skim mozzarella because it melts beautifully as you can see in the photo. I’m pretty picky about my Italian sausage, but I love al fresco’s sweet Italian chicken sausage[1], you forget it’s chicken while you eat it and it’s 75% less fat that pork sausage, and it’s gluten-free. Hope you enjoy.

Ingredients:

  • 1 1/4 cups quick marinara sauce[2]
  • 4 (31 oz total) medium zucchini
  • 1 tsp oil
  • 1/2 small onion, finely diced
  • 3 cloves garlic, crushed
  • 1/2 cup diced red bell pepper
  • 14 oz lean Italian chicken sausage, removed from casing (Al Fresco)
  • 1/2 cup part skim shredded mozzarella (Polly-O)
  • 8 tsp grated Parmesan cheese

Directions:

Bring a large pot of water to boil.

Preheat oven to 400°. Cut zucchini in half lengthwise and using a spoon or melon baller, scoop out flesh, leaving 1/4″ thick. Chop the scooped out flesh of the zucchini in small pieces and set aside.

Drop zucchini halves in boiling water and cook 1 minute. Remove from water.

Place 1/4 cup of sauce in the bottom of a 9 x 12″ baking dish, and place zucchini halves cut side up.

In a large saute pan, brown sausage, breaking up as it cooks into smaller pieces until browned; set aside. Heat oil and add onion, garlic and bell pepper. Cook on a medium-low heat for about 2-3 minutes, until onions are translucent. Add chopped zucchini, season with salt and pepper and cook about 2-3 minutes. Combine with sausage and cook a few more minutes.

Using a spoon, fill each hollowed zucchini with 1/3 cup cooked sausage, pressing firmly. Top each with 2 tablespoons each of sauce, 1 tablespoon each of shredded mozzarella cheese and 1 teaspoon each of parmesan cheese. Cover with foil and bake 35 minutes until cheese is melted and zucchini is cooked through.

Easy Macaroni Casserole

This easy baked pasta dish is made with whole wheat elbows, ground turkey, veggies, marinara sauce and cheese. I can’t say enough good things about this casserole! It’s comforting, kid-friendly and so easy to make because there’s no need to pre-cook the pasta!

I come from the school of having to cook your pasta in plenty of water, so when someone kindly shared this recipe with me, I won’t lie, I was skeptical! But I loved the outcome, and since then I’ve made it a few times over tweaking it to my taste and we love it!

And the whole wheat elbows from DeLallo[1] – I’m so impressed with their taste! In fact, I like their pasta so much that I am partnering up with them this year as a brand sponsor. If you’ve been following me for a while you’ll know that my family and I don’t like the taste of whole wheat pasta. But that completely changed when I tried DeLallo, and my kids and husband liked it too!

I used whole milk mozzarella on top because the points didn’t change by using reduced fat, and I love my cheese melted and gooey, but you can use whichever you prefer.

Ingredients:

  • 1 lb 93% lean ground turkey
  • 1 tbsp olive oil
  • 1 cup chopped onion
  • 1 medium red pepper, chopped
  • 1/4 cup finely diced celery
  • 1/4 cup finely diced carrots
  • 1 cup sliced mushrooms
  • 1 (14.5 oz can) petite diced tomatoes, drained
  • 2 cups marinara sauce (I used my own homemade)
  • 2 cups water
  • 1/2 tsp Italian seasoning
  • 1 tsp Kosher salt
  • 8 oz shredded mozzarella cheese
  • 8 oz uncooked DeLallo[2] whole wheat elbows

Directions:

In a large deep non-stick skillet, brown the ground turkey over high heat until cooked through, seasoning with a pinch of salt and breaking it up into smaller pieces as it cooks. Set aside on a dish.

Add olive oil to the skillet, reduce heat to medium and add the onion, red pepper, celery and carrots; sauté until the vegetables soft, about 6 to 7 minutes.

Return the turkey to the skillet along with the remaining ingredients except for the pasta and cheese.

Bring to a boil and then lower heat to medium-low and simmer for 20 minutes. While simmering, heat oven to 350°F.

Spoon just enough of the turkey/vegetable mixture to cover the bottom of a 9×13 pan. Cover with uncooked pasta. Spoon remaining sauce mixture evenly over the top and sprinkle with cheese.

Cover with foil and bake 50-55 minutes. Remove from oven and let stand, covered, for 15 minutes.

Divide into 8 servings.

Stuffed Bell Peppers with Chicken Italian Sausage, Rice, and Spinach

It has been cold and rainy for the last few days and I was craving some comfort food yesterday. I grabbed a few bell peppers, chicken Italian sausage, rice, onion, and leftover marinara sauce and made these stuffed peppers. They were simple to make, smelled fantastic while they baked, and tasted great. My husband and I really liked them while my kids weren’t the biggest fans. Their loss.

Prepare rice, per instructions.

While rice is cooking, heat a skillet over medium heat. Once hot, add the onion and cook for about 5-7 minutes, or until tender. Add the chicken Italian sausage, casings removed. Using a potato masher, mash the sausage while it cooks until crumbled. Add the minced garlic, oregano, fennel, and crushed red pepper flakes, and cook for 3-4 minutes or until sausage is cooked, stirring often. Add prepared rice, spinach, and basil along with 1 cup of marinara sauce and mix thoroughly. Taste and season with sea salt and freshly cracked pepper, to taste.

Preheat the oven to 350 degrees.

In a large glass baking dish, add 1-1 1/2 cups of water. Cut the bell peppers in half, lengthwise, then remove the seeds. Scoop meat mixture into each pepper half until it’s heaping full and place into baking dish. Add a spoonful  of the remaining marinara sauce to each pepper then top with sprinkled Parmesan cheese.

Bake covered in tin foil for 40 minutes. Remove foil and bake additional 5 minutes.  Sprinkle with fresh basil and serve. Enjoy.

Ingredients:

1 cup of uncooked jasmine rice, cooked per instructions
2 tsp olive oil
1/2 sweet yellow onion, diced
5 chicken Italian sausage links, casings removed
2 cloves of garlic, chopped finely
Sea salt and freshly cracked pepper, to taste
1 tsp fennel seeds, crushed
1/2 tsp dried oregano
Pinch of crushed red pepper flakes
1/2 cup of baby spinach, chopped
2 tbsp fresh basil, chopped (plus more for garnish)
1 1/2 cups of marinara sauce (divided)
3 bell peppers, 1 orange, 1 yellow, 1 red
Parmesan, shredded

Directions:
