Chicken and Cilantro Pot Stickers

We had friends over for dinner recently and my girlfriend brought some frozen chicken and cilantro pot stickers. My daughter loved them so much she kept asking my friend to make more. I decided to try my hand at making my own version of these pot stickers and I am so glad I did. These babies took some time to make but they were worth every minute! We all absolutely loved them and ate all but four which my husband took to work today. I served these pot stickers with homemade Pot Sticker Dipping Sauce[1] and an Asian Noodle Salad[2]. This meal was  big hit with the entire family and I know it will be a regular on our table from now on.

Boil the water and pour over the sliced cabbage to soften. Drain excess water from the cabbage and put into food processor. Add ground chicken, cilantro, green onions, garlic, sesame oil, soy sauce, rice vinegar, and fresh ginger. Pulse mixer until thoroughly combined.

Spread out the pot sticker wraps and scoop a small teaspoon full of filling onto the center of each wrap. Wet the top of each pot sticker wrap with a baster brush dipped in water.

Fold the pot sticker to make a moon shape and pinch shut with 4 to 5 pleats along the side. Really make sure they are sealed, so the filling doesn’t fall out.

Heat 1 tablespoon of olive oil in a pan. Once hot, pot stickers and cook until the bottoms are golden brown. Add 1/3 cup of water and cover with a lid. Steam for 4 minutes. Repeat with the remainder of pot stickers. Remove from heat and serve with a dipping sauce.

Ingredients:

Pot Stickers:

3 cups of boiling water
1 1/2 cups napa cabbage, sliced finely
1 lb ground chicken breast
1/2 cup fresh cilantro, chopped
2 green onions, diced
2 clove of garlic, minced
1 tbsp sesame oil
2 tsp soy sauce
1 tsp rice vinegar
1/4 tsp fresh ginger, minced
Pot sticker wraps
2-3 tbsp olive oil (divided – 1 tbsp per batch in pan)

Directions:

Healthy Cookies

A healthy cookie made with just three ingredients! Mashed ripe bananas, oatmeal and walnuts. OMG, these really ARE healthy!

Cookie’s for breakfast, cookies for lunch, cookies, cookies coooookies.

I’m really so excited about these cookies, can’t you tell? Thank you, thank you to the person who emailed me this recipe[1]. It was actually a recipe for a two ingredient cookie, but walnuts and bananas really do it for me, think banana bread.. in a cookie.

The cookies are best right out of the oven, they are chewy and soft – just how I like my cookies.

I’m anxiously awaiting my next batch of bananas to get super ripe so I can make them again. This time, I’m going to add almonds and see how they turn out. Next time, maybe raisins? chocolate chips? Cinnamon, pumpkin spice, vanilla… can’t wait!

Egg free, dairy free, gluten free (use gf oats), vegetarian, vegan, kid friendly… what else can I say??

Be sure your bananas are super ripe. I’ve only tested them with quick oats, so I’m not sure how they work with rolled oats. My gut tells me stick with the quick oats.

If you’re on Weight Watchers; each cookie is 1 points plus. Quick breakfast to go; 5 cookies and a piece of fruit = 5 point plus! Leave the nuts out, they are still 1 point each. Replace the nuts with mini chocolate chips… still 1 point. Make these today!

Ingredients:

  • 2 medium ripe bananas, mashed
  • 1 cup of uncooked quick oats*
  • 1/4 cup crushed walnuts

Directions:

Preheat oven to 350°F.  Spray a non-stick cookie sheet with cooking spray or use a Silpat.

Combine the mashed bananas and oats in a bowl. Fold in the walnuts and place a tablespoon of each on the cookie sheet.

Bake 15 minutes. Makes 16 cookies.

*Use gluten free oats such as Bob’s Red Mill quick oats to make them gluten free.

Skinny No-Bake Peanut Butter Pie

Light and creamy and ever so addicting! Whip this up in minutes for a dessert everyone will love. It’s Peanut Butter Lover’s Day (who knew!) so I thought I would revive this from the archives, one of my favorite desserts!

I don’t know about you but I love pie! Fruit pies, banana pie[1], pumpkin pie[2], pudding pies, and high on my list… peanut butter pie. To keep it light I used Better n’ Peanut Butter[3] which is available at Target, Trader Joe’s, health food stores and online[4].

Drizzle the top with a little chocolate syrup right before serving and you will enjoy each and every last bite!

Ingredients:

  • 5 oz reduced fat cream cheese, softened
  • 1/2 cups confectioners’ sugar
  • 1/3 cup Better n Peanut Butter[5]
  • 8 oz fat free frozen whipped topping, thawed (or truwhip[6] for healthier option*)
  • reduced fat graham cracker pie crusts
  • 3 tbsp Hershey’s chocolate syrup

Directions:

Beat cream cheese and confectioners’ sugar together in a medium bowl.  

Mix in Better ‘n Peanut Butter and beat until smooth. Fold in whipped topping.

Spoon into graham cracker pie shell; cover, and refrigerate until firm, at least 2-3 hours. Drizzle with chocolate syrup before serving.

Note: For an all natural whipped topping option, look for truwhip[7].  It contains neither high fructose corn syrup nor hydrogenated oil. Their website has a store finder[8] so you can locate it at a store near you.
