Asparagus with Garlic and Lime

Asparagus with Garlic and Lime

by Pam on February 26, 2014

Do you ever think about a recipe all day long and get really excited to make it because it sounds so good? That happened to me recently. I had a recipe for some lime chicken that sounded amazing, but when I made it, the color of the sauce was really UGLY which then made me not care for the dish so much. It still tasted good but looked terrible. Needless to say, it WAS NOT blog worthy. Thankfully, I also made this asparagus to pair with the chicken. I wanted to try lime instead of lemon and we all absolutely loved it. I can’t believe I’d never tried this flavor combination before. I am so glad the whole meal wasn’t a disaster and that this asparagus saved the day!

Heat the olive oil and butter together in a large sauté pan. Add the asparagus then cover with a lid and cook for 2-3 minutes, depending on how thick the asparagus is (longer if they are really thick).  Remove the lid, add the lime juice, minced garlic, and season with sea salt and freshly cracked pepper, to taste. Cook, stirring constantly, for 1 minute. Serve with additional lime. Enjoy.

Asparagus Egg and Bacon Salad with Dijon Vinaigrette

I love the combination of this simple salad of asparagus, hard boiled egg and bacon tossed with a Dijon vinaigrette – it has Spring written all over it!

I’ve been dying for this salad all week. Asparagus and eggs are a match made in heaven, but not just for breakfast, it’s great for lunch too! I always keep hard boiled eggs on hand in my fridge to use throughout the week, therefore this salad came together in less than 10 minutes. It’s perfect to pack for lunch, and you can easily double or multiply the recipe to feed more. It’s also very inexpensive to make, low-carb, high in protein and fiber and perfect for gluten-free and Paleo diets.
