Asparagus with Garlic and Lime

Do you ever think about a recipe all day long and get really excited to make it because it sounds so good? That happened to me recently. I had a recipe for some lime chicken that sounded amazing, but when I made it, the color of the sauce was really UGLY which then made me not care for the dish so much. It still tasted good but looked terrible. Needless to say, it WAS NOT blog worthy. Thankfully, I also made this asparagus to pair with the chicken. I wanted to try lime instead of lemon and we all absolutely loved it. I can’t believe I’d never tried this flavor combination before. I am so glad the whole meal wasn’t a disaster and that this asparagus saved the day!

Heat the olive oil and butter together in a large sauté pan. Add the asparagus then cover with a lid and cook for 2-3 minutes, depending on how thick the asparagus is (longer if they are really thick).  Remove the lid, add the lime juice, minced garlic, and season with sea salt and freshly cracked pepper, to taste. Cook, stirring constantly, for 1 minute. Serve with additional lime. Enjoy.

Ingredients:

1 tsp olive oil
1 tsp butter
1 bunch of asparagus, wooden ends removed
Juice from 1/2-1 lime, to taste
2 small cloves of garlic, minced
Sea salt and freshly cracked pepper, to taste

Directions:
