Ingredients
- 375 g peeled hazelnuts
- 300 g sugar
- 200 g fresh cream
- 200 g dark chocolate
- 100 g egg white
- 35 g honey
- 35 g bitter cocoa
For the recipe for Baci di Alassio, bring the cream to the boil and pour it over the chopped chocolate; stir until it is dissolved in a cream. Let it cool. Toast the hazelnuts in the oven at 180 ° C for about 10 minutes. Take them out of the oven and let them cool.
Then whisk in the cutter together with the sugar, obtaining a powder; mix it with the egg white, honey and cocoa until you get a consistent dough. Collect it in a pastry bag with a star nozzle and distribute it in tufts on a plate lined with baking paper. Bake at 200 ° C for 10-12 minutes; take them out of the oven and let them cool, then spread a little cream on half of them and pair them with the others, obtaining kisses.
