Tiramisu, the Italian dessert par excellence, during the holidays but not only.
The original recipe includes a few ingredients, mascarpone, eggs, sugar, ladyfingers, coffee and cocoa powder and a dash of marsala in the mascarpone and egg cream, balancing the taste.

To make a good tiramisu, start by banging yolks with sugar, until they become white and frothy. Combine the Marsala, then the mascarpone cheese and mix to obtain a homogeneous cream. Prepare the coffee and let it cool. Pour the cold coffee in a large bowl; soak away the savoiardi biscuits on both sides, quickly, to prevent them from getting too wet, then place them on the bottom of a rectangular baking dish
side by side (ours is 20×25 cm, h 4-5 cm).

Egg pasteurization
If you are not sure that the eggs are very fresh proceed with the pasteurization: beat the egg yolks, sugar and marsale and heat the cream in a bain-marie until 82 °. If you do not have the thermometer remove the cream from the heat when it will veil the spoon. Once cooled the cream can be added to the mascarpone.
