Put the cheese, salmon and chopped bread in a bowl and mix until you get a fairly uniform mixture.
With slightly damp hands, create 6 larger balls and another 6 smaller ones, pass them in the coconut flour, then overlap the smaller balls on the larger ones, applying light pressure.
Peel the carrot, wash and dry it, then with a vegetable peeler cut into strips with which you will create the scarf, and with a blade cut triangles to create the nose.
With the pitted olives, create a hat, eyes and button on the belly instead.
The cheese snowmen are ready, serve them immediately or keep them in the fridge until ready to serve.
