For the recipe for artichokes filled with sweet and sour, peel the artichokes, removing the outer leaves and the central beard, and gradually dip them in water acidulated with the juice of 1 lemon. Cook the whole artichokes in boiling salted water for 12-13 ’. Desalinate anchovies, washing them very well under running water.
Squeeze the oranges and the remaining lemon. Clean the onion, finely chop it and brown it in a pan with 65 g of oil; lower the heat, add the anchovies and melt them, then add the orange and lemon juice, 2 pinches of salt, 1 spoonful of flour and 2 teaspoons of sugar, mix well for 2-3 ', then turn off the sauce.
Chop a sprig of parsley and add it to the sauce. Drain the artichokes, spread the leaves well and place them on a serving dish; sprinkle with the sweet and sour sauce and bring to the table.
