Ingredients
- 120 g flour 00
- 70 g sage
- 2 pcs egg yolks
- 2 pcs pomegranates
- 1 pc saffron sachet
- sugar
- vinegar
- peanut oil
- extra virgin olive oil
- salt
For the recipe of fried sage, wash the sage and dry it. Mix 2 egg yolks with 120 g of water, 1 sachet of saffron, a pinch of salt and one of sugar. Finally add the flour and stir until the batter is smooth and homogeneous. Squeeze 1 pomegranate with a juicer, as if it were an orange; mix 35 g of the juice obtained with 40 g of extra virgin olive oil, 20 g of vinegar, 1 small bird of sugar and a pinch of salt, obtaining a vinaigrette. Heat plenty of peanut oil. Dip the sage in the batter (large single leaves or small leaves) and fry for 1-2 minutes, a little at a time. Drain on kitchen paper and serve with the vinaigrette and pomegranate grains.
