Ingredients
- 300 g flour 0
- 200 g milled durum wheat semolina
- 75 g milled durum wheat semolina
- 10 g fresh brewer's yeast
- 10 g salt
For the recipe of breadsticks, dissolve the yeast in 150 g of water and the salt in another 100 g of water. Mix the flour with the semolina, then add the oil, the water with the yeast and the one with the salt. Knead everything for a few minutes, until you get a soft and fairly homogeneous mixture.
Collect it in a long loaf, grease it with oil on the surface and let it rise covered with a damp cloth for about 3 hours.
Cut the dough into strips on the shorter side. Grab each strip at the ends and stretch it gently "stretching" it. Place the breadsticks on a plate covered with baking paper and let them rest for 10-15 minutes. Finally put them in the oven at 180 ° C for about 15-20 minutes, with a ventilated function. With this quantity of dough you will get about 70 bread sticks, to be cooked in two times on three plates at a time. During cooking, swap the top and bottom plates together, leaving the plate in the central part of the oven.
