For the recipe of crushed granita, peel 2 peaches and cut them into small pieces. Pound them in a mortar with a pestle together with the sugar, the leaves of 2 sprigs of rosemary, 2 slices of lemon and the juice of 1 lemon. Blend the peaches pounded with 2 other peaches in pieces; sieve to remove rosemary residues. Add the sparkling water and pour everything into a jug, which you will have half filled with crushed ice, the peach cut into pieces and rosemary sprigs.
