Chicken Hamburger Recipe - Italian Cuisine


  • 1 kg a chicken
  • 50 g leek
  • 15 g flour
  • 15 g butter
  • 4 slices of sandwich bread soaked in milk
  • 6 sesame hamburger buns

  • aromatic bunch (rosemary, thyme, sage, parsley stalks)
  • cloves
  • tomato concentrate
  • White wine
  • olive oil

For the chicken burger recipe, sprinkle the chicken to obtain about 450 g of pulp that you will use to prepare the burgers. Put the bird's carcass in a saucepan with a drizzle of oil and brown it well in the oven at 200 °. Then drain away the excessive fat, add the vegetables (celery, carrot and onion), a spoonful of tomato paste and a glass of wine and continue cooking, always in the oven, until the wine has reduced by half.

Then cover the bones with cold water (about 2 liters), add the aromatic bunch, some peppercorns, salt, 4-5 cloves and transfer over moderate heat until the broth is reduced by half. Filter it (you will need to obtain about one liter), seddnsatat it with the addition of butter mixed with flour. Also add half a glass of wine and simmer until the sauce has reduced by about a third; add salt and pepper to taste.

Start the hamburgers: sauté the chopped leek in half a spoonful of oil. Grind the chicken meat and mix it with the stewed leek, the squeezed sandwich bread, the egg, 3 spoonfuls of breadcrumbs, a pinch of salt, a mince of pepper. Divide the dough into six equal parts and prepare six hamburgers, which you will pass in the breadcrumbs and then cook in a veil of hot oil. Separately, brown the sandwiches cut in half in very little oil. Serve each hamburger den salsato in its sandwich, with other sauce aside.
