Beat the eggs with salt, pepper, cumin and grated lime zest.
Pass the avocado sticks first in the flour, then in the eggs and in the breadcrumbs. Then again in the eggs and breadcrumbs thus obtaining a double breading.
Fry the avocado sticks in hot oil. When they are golden brown, drain and place the fries on a plate covered with absorbent paper.
Serve immediately avocado sticks, accompanied with mayonnaise that you have seasoned with juice and lime peel.
