5 simple home-made recipes with few ingredients


Five proposals for cooking simple and tasty dishes with what you have in the pantry. And if you don't have these ingredients, there is still a solution!

It is not always possible to prepare elaborate and complicated dishes and even the simple recipes to do at home, with few ingredients present in all pantries can give valuable help to those who are at home and have to decide what to cook.

Lots of Italians in this delicate moment for the whole country, in full emergency Coronavirus, unfortunately have a hard time do the shopping and stock up on food, between lines at supermarkets and online stores that go haywire. So we thought of recipes with few ingredients that we can have at home (and if you don't have them, we will tell you how to make or replace them). Here it is!

5 simple recipes to make at home

Potato and dried mushroom pie

Potato and mushroom patties are one of the simple and quick recipes that still bring a tasty dish to the table. To prepare them you will need: 250 g dried mushrooms, 500 g of potatoes, 25 g of butter, 50 g of grated Parmesan cheese, 1 egg, breadcrumbs, extra virgin olive oil, garlic, salt and pepper.

Soak dried mushrooms at least half an hour before starting to cook. Boil the potatoes in salted water. While they are cooking they must be cut mushrooms into small pieces and put them in a pan with a drizzle of oil and a clove of garlic, adjusting salt and pepper and when they are ready they must be placed in a container covered with foil. Once cooked, the potatoes must be crushed with a fork and, in a large bowl, must be added to the puree parmesan and the softened butter and the egg, mixing everything well.

The potato and mushroom patties are ready to be cooked. You must therefore butter the molds (those for muffins are fine), sprinkle with the bread crumbs and then fill them in half with the potatoes, adding the mushrooms and covering again with the potatoes. The cooking is in the oven at 200 ° for about half an hour.

If you don't have mushrooms you can replace them for example with i frozen peas.

Pasta with anchovies and tasty bread

Who is looking for a fast first course to prepare can opt for spaghetti with anchovies and tasty bread. The ingredients they serve, for two people, are only: 180 g of pasta (preferably long), 30 g of anchovies in oil, chopped stale bread and breadcrumbs, extra virgin olive oil, a clove of garlic and parsley.

To prepare this simple recipe, start by boiling the water for the pasta and making fry the garlic with oil in a pan, adding the anchovies and a ladle of cooking water to dissolve them better. It will take a few minutes. In a separate pan, in the meantime, brown the bread crumbs with the oil. Then cook the pasta and remove it from the water one minute before cooking, remove the garlic and stir in the spaghetti in oil with anchovies. Serve and decorate the dish with bread crumbs and a sprinkling of parsley.

If you don't have anchovies, opt for garlic, oil and hot pepper and add the breadcrumbs for a little more taste!

Spinach and ricotta rustic pie

This dish is for those who are looking for a dish that is good for both lunch that for dinner. You will need: 500 g of spinach (both fresh and frozen), 150 g of ricotta, 80 g of Parmesan cheese, 1 egg, 2 rolls of puff pastry, salt, extra virgin olive oil and black pepper.

The preparation of the rustic cake starts from spinach ranging prepared in a pan with a drizzle of oil and without adding more water. When they are ready, after about 10 minutes, in a large container, they must be combined with ricotta cheese, egg, parmesan and everything must be mixed gently. The preparation must then be adjusted with salt and pepper and spread on the roll of puff pastry previously pierced with a fork. Then, with the other roll of puff pastry, the rustic cake must be covered and baked in the oven for about 20 minutes at 200 °.

If you don't have the puff pastry prepare it yourself, it takes time but only flour, water, butter and salt are needed.

Chicken rolls with carrots and courgettes

Among the simple recipes of main courses, one of the fastest and tastiest are the chicken rolls with carrots and courgettes. To prepare them you will need: 500 g of chicken breast, 2 carrots, 2 courgettes, white wine, salt, pepper and extra virgin olive oil.

You start by cleaning and cutting both the thin slices carrots that the zucchini and then put them to cook in a pan with water. It only takes two or three minutes, just to soften them a little. On each slice of chicken breast are then placed the strips of vegetables and the meat goes rolled up and stopped with two toothpicks. The cooking is done in a pan with oil and the rolls are ready when they become golden on the surface.

Lemon and almond cake

We conclude the menu of simple recipes with a sweet: the lemon and almond cake, excellent for Breakfast or as a dessert. To prepare it you will need: 150 g of 00 flour, 4 eggs, 150 g of sugar, 1 sachet of vanillin, 1 lemon, 150 g of almonds (or other dried fruit that you already have at the bottom of the pantry, such as walnuts and hazelnuts), 120 g of extra virgin olive oil.

In a large container mix with one electric whisk sugar and eggs, until a homogeneous mixture is obtained. Chop them well almonds (they must become a flour) and add them to the mixture together with the 00 flour while continuing to mix. Pour the oil and the lemon juice and transfer to a mixture in a greased baking tray or covered with paper. Bake at 180 degrees for about 30/35 minutes.
