Marche-style cod: the ingredients
For 4 people, you will need: 500 g of cod (cod), 400 g of ripe tomato, 100 g of flour, 50 g of olive oil, 2 cloves of garlic, parsley, salt and pepper to taste.

Start two days before when you want to cook the recipe, soaking the cod in plenty of water and letting it soak for a couple of days, taking care to change the water 3 or 4 times a day. After the two days, drain it from the water, rinse it, cut it into pieces, dilute them carefully and dry them. Now it's up to the sauce: peel the tomatoes, remove the seeds and mince them. Clean the parsley and mince it together with the garlic. Meanwhile, heat the oil in a pot, when it is hot, cook the tomatoes and season with salt and pepper. Bring to a boil and add the minced garlic and parsley, now cook over medium heat. Now dedicate yourself to cod again, passing the pieces in flour, and then fry them in plenty of oil. Once golden, dry them with paper towels, arrange them on a serving plate and serve with tomato sauce.
