Roasted, Smashed, and Loaded Potatoes

I was recently sent some Rooster[1] potatoes and I was excited to give them a try. These Rooster[2] potatoes start out pink but then turn light golden brown with a nice fluffy yellow flesh when cooked. They can be baked, mashed, boiled, or roasted.

I par boiled them for a bit then smashed them and placed them on a baking sheet. I roasted them until they were nice and crispy then loaded them up with butter, sharp cheddar, sour cream, bacon bits, and green onions. They were crisp on the outside, creamy on the inside, and super delicious. These potatoes paired nicely with the Slow-Roasted Beef and my House Salad and it made a terrific Sunday dinner. [3][4]

Preheat the oven to 400 degrees. Coat a baking sheet with cooking spray.

Boil the potatoes in water for 10-15 minutes or until fork tender. Place on the prepared baking sheet. Place the potatoes on a paper towel and with another towel on top of the potatoes, gently press down with your hand to smash them. You can also use a potato masher but I find that my hand does a better job. Place the smashed potatoes on the baking sheet and drizzle with olive oil, sea salt and freshly cracked pepper, to taste.

Place into the oven and bake for 10-15 minutes then carefully flip them over and bake for an additional 10 minutes. Remove from the oven and place a bit of butter on each potato followed by some shredded sharp cheddar, a dollop of sour cream, some bacon bits, and green onions. Serve immediately. Enjoy.

Prep Time: 10 min.

Total Time: 35-40 min.



Ingredients:

6 Rooster potatoes, par boiled
1 tbsp olive oil (drizzled evenly on top of all potatoes
Sea salt and freshly cracked pepper, to taste
Butter, to taste
Sharp cheddar, shredded
Sour cream, to taste
1 slice of bacon, cooked & crumbled
1 green onion, sliced

Directions:

Green Chile and Pinto Bean Layered Mexican Casserole

I saw this recipe on Kalyn’s Kitchen[1] that looked too good to resist. I adapted it a bit and added tomato slices to the top before baking. It tasted AMAZING ! My husband and I loved it (it was too spicy for my kids). I had some of the leftovers today and it was even more flavorful. I topped it with green onions, cilantro, sour cream, and diced avocado and  the combination of flavors and textures was terrific.. I also served this casserole with tortilla chips on the side –  I loved the crunch the chips gave to each bite. Thanks for the great recipe Kalyn!

Preheat oven to 375 degrees.  Spray an 8×8 inch glass baking dish with cooking spray.

Heat the olive oil in a large skillet over medium heat.  Add the onion and sauté, stirring often, for 4-5 minutes, until they are tender.  Add the garlic, cumin, and oregano then season with sea salt and freshly cracked pepper, to taste; cook another minute or two, stirring constantly, then add the drained beans and cook 3-4 minutes, then mash the beans slightly with a potato masher.  Add the tomatillo verde  sauce and simmer until the sauce is mostly absorbed by the beans, about 5-6 minutes.  Turn off the heat and stir in the sour cream, green onions, and fresh cilantro.

While the bean mixture is cooking, open the whole chiles with your fingers and wipe with paper towels to dry them and remove any remaining seeds. In the prepared glass baking dish make a layer with half of the whole green chiles.

Next layer half of  the bean mixture and half of the cheese.

Repeat. Layer slices of tomatoes on top.

Cover with foil and bake 20 minutes.  Remove the foil and bake for 20 minutes longer, until the casserole is bubbling.  Turn the oven to broil and cook, watching carefully, for a few minutes until the cheese is starting to become golden brown. Remove from the oven and let cool for 5 minutes.

Serve topped with sour cream, green onions, cilantro, diced avocado, and with a side of tortilla chips. Enjoy.

1 clove of garlic, minced
1 tsp ground cumin
1/2 tsp dried oregano
Sea salt and freshly cracked pepper, to taste
2 cans (15 oz) pinto beans
2 cans (10 oz) whole mild green chiles
1/2 cup tomatillo verde sauce
1/2 cup sour cream
2 green onions, finely sliced
2 tbsp fresh cilantro, chopped
1 cup cheddar cheese, grated

Honey-Soy Chicken Drumsticks

My son loves Asian food so I went in search of an Asian inspired chicken drumstick recipe. I found one Very Culinary[1] that sounded perfect and it used ingredients I had on hand – I love that. It look minutes to throw the marinade together and the chicken smelled fantastic while it baked. It was a big hit with all of us – the chicken turned out moist, tender, and very flavorful. My son most definitely approved of this dish!

Combine the honey, soy sauce, garlic, and ginger together in a large zip lock bag. Add the chicken drumsticks to the bag and seal. Place into the refrigerator for at least 4 hours.

Preheat oven to 425 degrees. Line a baking sheet with tinfoil then coat with cooking spray.

Lay chicken on the baking sheet. Bake for 35 minutes, or until a cooked through. Brush the remaining marinade over the chicken every 10 minutes.

Sprinkle some fresh cilantro, sesame seeds, and green onions on top and serve with Garlic Rice with Green Onions and Cilantro[2].

3 tbsp of honey
5 tbsp of soy sauce
4 cloves of garlic, minced
1 tbsp ginger, minced
1 tsp sesame seeds, for garnish
2 scallions, chopped, for garnish
1 tbsp fresh cilantro, chopped for garnish

Directions:

Combine the honey, soy sauce, garlic, and ginger together in a large zip lock bag. Add the chicken drumsticks to the bag and seal. Place into the refrigerator for at least 4 hours.
