Ungaretti Spaghetti Recipe - Italian Cuisine


  • 320 g Spaghetti
  • 100 g Butter
  • 60 g Grated grain
  • 20 g Dry breadcrumbs
  • Cumin seeds
  • nutmeg
  • salt

Cook the spaghetti in boiling salted water. Crumble the bread and roast it in a pan, without adding fat. Melt the butter in a non-stick pan, then add a ladle of pasta cooking water. Immediately add the grated parmesan, the cumin and a pinch of nutmeg and stir so as to mix the ingredients, obtaining a sauce. Drain the pasta and pour it into the pan with the sauce: toss it, stirring it, until the sauce has the right consistency and the dough will not be well seasoned. Serve complete with the toasted crumb.
