Semolina pancakes recipe for Carnival


  • 400 g milk
  • 150 g semolina
  • granulated sugar 80 g, plus a few tablespoons
  • 50 g dried plums
  • 50 g dried apricots
  • an egg
  • an Apple
  • an untreated lemon
  • orange blossom water
  • fry oil
  • salt

To make semolina pancakes for Carnival, boil the milk with as much water. Salt it to the boil and pour the semolina in the rain, stirring all the time. Cook it for 10 minutes. Remove the polenta thus obtained from the heat and pour it into a bowl. Add 80 g of sugar, egg, prunes and dried apricots cut into tiny pieces. Also mix the apple, peeled and made into very small dice. Flavor the dough with the grated lemon zest and a spoonful of orange blossom water. Heat plenty of oil in the frying pan. Fry the dough into balls as big as a walnut. Roll them as they are ready in sugar, then bring them to the table very hot.
