Recipes with artichokes and potatoes: the most popular combination

One of the best pairing in the kitchen is that of artichokes in a pan with potatoes, a classic combination loved by all thanks to its simplicity. For a perfect result remember to keep the artichoke wedges in water and lemon to prevent them from losing their color and to cut the potatoes the same size as the artichokes.
Brown the garlic in a pan, add artichokes and potatoes and cook for a few minutes; add the white wine, let it evaporate, cover with water and let it cook for about 15 minutes with the lid on. When cooked, season with salt, pepper and add the parsley.

Another possibility to bring this couple of ingredients to the table is to cook baked artichokes and potatoes. In a baking dish, alternate layers of artichokes and potatoes, season each layer with salt, pepper and parsley and sprinkle the surface with breadcrumbs and grated cheese (pecorino goes perfectly). Complete with a drizzle of extra virgin olive oil and bake in the oven for about an hour at 200 ° C.

Recipes with light artichokes

Fried artichokes are certainly an indispensable pleasure, but this vegetable can also be the protagonist of much healthier and lighter dishes. Among the light recipes with artichokes, the cream is undoubtedly an excellent choice for detoxifying with taste.
However, there is another way to savor the artichoke without even turning on the stove, namely theraw artichoke salad! To prepare it, start by cleaning the artichokes: first of all remember that it is very important to soak the cleaned wedges in water and lemon juice, to prevent them from oxidizing. Once cleaned, cut the wedges into very thin slices and prepare one citronette emulsifying the lemon (or orange) juice with oil, salt and pepper.
