Recipe smoked white meat with potatoes and peppers


  • 2 kg blanched on the bone
  • 400 g peeled tomatoes
  • 10 g dehydrated onion
  • 10 g spicy paprika
  • 5 g dehydrated garlic
  • 6 pcs small sweet peppers
  • 6 pcs small white potatoes
  • 6 pcs small red potatoes
  • 1 pc fresh chili
  • sugar
  • garlic
  • vinegar
  • spring onion
  • molasses
  • smoked paprika
  • pepper
  • extra virgin olive oil
  • salt
  • wood chips for smoking

For the recipe for the smoked steak with potatoes and peppers, mix the dehydrated garlic and onion, the spicy paprika, 30 g of sugar and 50 g of salt. Sprinkle the meat with this mixture and bake it at 140 ° C for 3 hours by inserting two handfuls of burning shavings into the oven on a plate, which will make a little smoke. You will need to light them two or three times, depending on how much you like the smoky taste. Remove the meat from the oven and wrap it completely in aluminum, then cook it for another 50 minutes; let it rest wrapped in paper for 1 hour out of the oven.
FOR THE SAUCE
Brown the sliced ​​chilli with 1 chopped spring onion in a saucepan with a drizzle of oil and 1 clove of garlic for about 2 minutes. Add the tomatoes, a pinch of salt, pepper, 1 teaspoon of smoked paprika, 50 g of molasses and 1 tablespoon of vinegar and cook for about 40 minutes. Finally pass the sauce through a vegetable mill.
FOR THE VEGETABLES
Wash the potatoes, cut them in half and blanch them for 3 minutes. Then arrange them on a baking sheet. Next, arrange the peppers cut in half and without seeds. Bake at 220 ° C for 15-20 minutes. Slice the meat and serve it with the vegetables and the sauce and, if you like, in a sandwich, as we did.
