- half cedar
- 150 g rocket
- 100 g soncino
- 12 pcs radishes
- 2 pcs oranges
- 2 pcs tufts of white and red Belgian endive
- 1 pcs of lettuce heart
- extra virgin olive oil
- salt
- pepper
For the refreshing citrus salad recipe, wash the cedar peel well, then, without peeling it, cut it into thin slices; eliminate the seeds. Peel the oranges and separate the slices. (Wanting to peel them alive: cut the peel by exposing the pulp and cut the cloves apart from the skin with a small knife). Browse the heads of Belgian endive. Wash all the salads. Peel the radishes and cut them into slices. Collect salads, radishes and citrus fruits in a bowl. Season the salad with a little oil, salt and pepper. Add grated orange peel to taste.
