Ingredients
- 300 g pasta like sedanini
- 8 courgette flowers
- 2 courgettes
- 2 firm coppery tomatoes
- parsley
- basil
- chives
- salt
- pepper
- extra virgin olive oil
For the crudaiola sedanini recipe, put a saucepan with the water for the pasta on the stove. Add salt and, when boiling, add the sedanini. Meanwhile, prepare the vegetables: cut the courgettes in quarters, lengthwise, and remove the central part with the seeds. Finally, cut them into sticks, on the bias. Put them in a bowl with a little salt for 5 minutes.
Cut the tomatoes into four wedges, remove the seeds and also cut into sticks.
Dab the zucchini with kitchen paper, to remove their water, and mix them with the tomatoes. Clean the courgette flowers, removing the pistil, rinse and chop them in the bowl, adding them to the zucchini and tomatoes.
Chop a sprig of parsley and a few strands of chives and season the vegetables with the mince, 4-5 tablespoons of oil and a little pepper. Drain the pasta and pour it into the bowl of vegetables. Mix and complete with two basil leaves.
