To prepare the plum jam, wash the plums, pit them, cut them into pieces, collect them in a double-bottomed saucepan, bring them to a moderate heat then cook them for 10 ', stirring often, to soften the fruit; then add the sugar and continue cooking, making sure that the mixture does not attack. After about 10 ', pass everything through a vegetable mill with a fine disc, collect the jam again in the saucepan and boil it until it reaches 105 ° (gelation point). Pour it boiling into hot sterilized jars, cap them hermetically and, before placing them in the pantry, let them cool slowly, upside down, so that the vacuum is formed, then label them.
