Ingredients
- 200 g curly salad
- a fennel
- a bunch of radishes
- mustard sprouts
- 2 boiled eggs
- mustard
- olive oil
- vinegar
- salt
To prepare the mixed spring salad, clean the salad, wash it, dry it, chop it by hand and put it in a salad bowl. Add the fennel, also peeled, washed and cut into strips. Add the radishes to the mixture, washed, peeled and sliced. Complete with a handful of mustard sprouts and a sliced hard-boiled egg. Emulsify the yolk of the second egg with a pinch of mustard, a spoonful of vinegar, 3 of oil, salt and serve the salad with the sauce.
