Crêpes without eggs: basic recipe

Ingredients

300 ml of milk (also vegetable: very good to try the crêpes made with almond or oat milk)
130 g of 00 flour
80 ml of seed oil
vanilla (optional)
30 g of sugar

Method

To prepare the crepes, simply mix the liquid ingredients first, then milk and oil, then add the sugar and finally the well-sifted flour, and possibly the vanilla extract or berry seeds.
We suggest you use one hand whisk to eliminate any lumps, but do not blend.
Leave this batter in the refrigerator well covered with plastic wrap for about an hour and after this time prepare the crepes. This step is very important because all the ingredients must mix well. A little patience will be rewarded by an extraordinary result.
To cook the crepes, pour the mixture with the ladle on the hot and lightly buttered pan, let it stretch well simply by moving the pan with your wrist and wait for it to compact on the base.
Then turn the crepe a minute on the other side and it is ready.
While preparing them, stack them one on top of the other to keep them moist.

The secret to perfect crepes

In addition to having to prepare an excellent batter, dense at the right point and without lumps, it is very important to use the right pan.
You don't necessarily have to have a crepe maker, although we suggest you buy one because it can always come in handy, but you just need a no stick pan dedicated to the preparation of crêpes, crepes and pancakes. Do not use it for vegetables, meat and fish.
Grease it lightly each time with a sheet of kitchen paper and then clean it, but always only with a sheet of kitchen paper. Never wash it with soap.
This is the real secret of the grandmothers.

Chickpea crepes

This recipe is delicious, both in salty and sweet versions.
It is also particularly rich in nutrients and therefore super recommended for those who follow a healthy and balanced diet.
Fill the chickpea crêpes with jam for breakfast and snack and with vegetables and creamy cheeses as a complete meal.
Chickpea flour must mix well with the water and oil to become smooth and homogeneous and must rest for a while. The compound may have seemed very liquid at first, but it will work.

Ingredients

120 g of chickpea flour
1 tablespoon of extra virgin olive oil
salt
pepper
270 ml of water

Method

Mix all the ingredients with a hand whisk and create a homogeneous batter.
Add salt and pepper, and also some herbs if you like, for the salty version.
A spoonful of sugar and a pinch of vanilla or cinnamon for the sweet version.
These crepes cook exactly like the others, but are slightly thicker.

How to stuff sweet crepes

Orange jam is a classic, but you can use your favorite jams, perhaps slightly heated in a pan with orange or lemon juice.
The sweet tooth will not give up spreadable creams such as hazelnut, almond or pistachio for a mouth-watering dessert.
And then cooked fruit is another excellent idea because it creates a full-bodied and rich filling.
Try with apples, pears or caramelized bananas and treat yourself to a spoonful of whipped cream that always brings morale!

How to stuff savory crepes

If you want to offer crêpes as a rich second course and a single dish, you can stuff them with vegetables of all kinds.
Courgettes and eggplants, sautéed or grilled, peppers, cauliflowers and steamed broccoli, but also chicory, chard and spinach sautéed in a pan.
Try them also with mixed mushrooms or legume creams.
A very interesting combination that we recommend is this: chickpea hummus, dried tomatoes in avocado oil and a sprinkle of lime.
Obviously, if you love classic crepe, opt for cold cuts and mozzarella.
