Cruffin Recipe - Italian Cuisine


  • 300 g flour 0
  • 200 g butter
  • 75 g milk
  • 40 g caster sugar
  • 1 pcs dry yeast sachet
  • icing sugar

For the recipe of cruffins, dissolve the yeast in 85 g of water. Mix the flour with the granulated sugar, then add the milk, the water with the yeast, 50 g of soft butter and a pinch of salt. Knead until obtaining a homogeneous and smooth ball; wrap it in a damp cloth and let it rise at about 28 ° C for 1 hour and 30 minutes. Soften 150 g of butter. Divide the dough into 8 equal wedges and pull them so as to obtain long rectangular sheets (45 × 15 cm) 1 mm thick. Brush the 8 sheets with the softened butter. Roll it 4 on the short side forming «cigars. Wrap each «cigar in a second sheet. Flour the blade of a well sharpened knife and, with the tip, cut the 4 «cigars in half lengthwise, without crushing the dough. Wrap each half in a swivel, keeping the part of the cut outwards. Grease 8 round molds (ø 7 cm) and lay the swivels. Let them rise at 28 ° C for 1 hour. Bake at 180 ° C for about 20 minutes. Let the obtained cruffins cool, sprinkle with icing sugar and serve, accompanying them to taste with strawberry jam.
