- 120 g almond flour
- 40 g grated coconut
- 40 g caster sugar
- 40 g icing sugar
- 15 pcs shelled almonds
- 1 pc egg

- fresh ginger

For the coconut biscuit recipe, peel and grate a piece of ginger root; squeeze the pulp, filtering it with kitchen paper or gauze, so as to obtain 1 tablespoon of juice. Mix the almond flour with the grated coconut, the granulated sugar, the half lemon peel, half a teaspoon of yeast, the egg, 1 tablespoon of the orange blossom aroma and the ginger juice. Divide the dough into balls of about 15 each: you will get about fifteen; pass them in the icing sugar, place them on a baking sheet covered with baking paper and garnish with 1 almond each. Bake at 160 ° C for 15 minutes, leave to cool and serve.
