Spicy Broccoli and Orzo

I found this recipe on Skinnytaste[1] and couldn’t wait to make it. I paired it with the Roasted Pepper, Spinach, and Sharp Cheddar Stuffed Chicken Breast[2] and it was a delicious, flavorful, and healthy meal. My kids gobbled this up even though it was a bit spicy and they both said they loved it. I’ll be honest, I had seconds and I am fairly certain my husband had thirds. This will be on our table again soon.

Cut broccoli into small florets. Steam covered with a little water until just tender, be careful not to overcook it. Remove the cooked broccoli and set aside.

While the broccoli is steaming, cook pasta per instructions in salted water. Drain orzo in a colander. Add the oil to the pan over medium heat. Add the broccoli, crushed red pepper flakes, and broccoli. Cook, stirring constantly, for 90 seconds. Add the orzo and gently mix until well combined. Season with sea salt and freshly cracked pepper, to taste. Serve immediately. Serve with shaved Parmesan. Enjoy.

Ingredients:

5 oz orzo pasta, cooked per instructions
2 cups of small fresh broccoli florets
3 tsp olive oil
Pinch of crushed red pepper flakes, more if you want it extra spicy
2 cloves garlic, minced
Sea salt and freshly cracked pepper, to taste

Directions:

Creamy Caesar Dressing

Creamy Caesar Dressing

I found this recipe on Skinnytaste[1] and couldn’t wait to make it. I never make Caesar salads because they are so unhealthy but this recipe gives you all the Caesar salad flavor but without any of the guilt. I adapted the recipe a bit by adding some Worcestershire sauce, black pepper,  and extra garlic. This creamy dressing has a ton of flavor and it was super simple to make. I loved how tangy and garlicky it was. This will be a regular on my table from now on.

Combine the cheese, lemon juice, minced garlic, Dijon mustard, Worcestershire sauce, freshly cracked black pepper, to taste, and anchovies in a small bowl. Mix with an immersion blender until well combined. Add the oil and Greek yogurt and mix with the immersion blender until creamy and smooth. Taste and re-season with freshly cracked pepper, if needed. Enjoy.

Yield: 3/4 cup

Prep Time: 5 min.

Total Time: 5 min.


1/3 cup of grated Parmesan cheese
1/4 cup of fresh lemon juice
2 cloves of garlic, minced
1/2 tsp Dijon mustard
Dash of Worcestershire Sauce
Freshly cracked pepper, to taste
2 anchovy fillets
1 tbsp olive oil
5 tbsp non fat plain Greek yogurt


Ingredients:

As we come to the year’s end, I can’t help but reflect on the highs and lows of 2012, and try to imagine what 2013 will bring. Today is a gift we should grasp with both hands, and remember that our faith, family, health, our home sweet homes, and the food on our table are all we really need; everything else in life is a bonus!

But looking back, there were lots of Skinnytaste highlights this year, the top of the list was a book deal with Clarkson Potter[1] – woohoo!!! I’ve been really busy testing new recipes for the cookbook, then comes the photography, book design, cover designs, lots of fun stuff ahead! I promise to keep you posted as I go through the process.
