Mini Baked Frittata with Bacon, Tomato, Sharp Cheddar, and Green Onion

I love making individual frittatas for lunch. They are quick and easy to make and a great way to use up leftovers in my refrigerator. This time I used up some bacon crumbles, sharp cheddar, tomatoes, and green onion. I loved the combination of flavors and textures in this fluffy frittata. This was a tasty and healthy lunch.

Preheat the oven to 350 degrees.  Coat a mini baking dish with cooking spray.

Mix the eggs with the milk until well combined then season with sea salt and freshly cracked pepper, to taste.  Place a few pieces of bacon, tomato slices, sharp cheddar, and green onion into the mini baking dish.

Pour the egg mixture into the baking dish then place the remaining bacon, tomato slices, sharp cheddar, and green onion on top.

Place into the oven and bake for 25-30 minutes, or until a tester inserted into the center comes out clean.  Remove from the oven and serve immediately.  Enjoy.

Yield: 1

Prep Time: 5 min.

Cook Time: 25-30 min.

Total Time: 30-35 min.



Ingredients:

2 eggs
2 tsp milk
Sea salt and freshly cracked pepper, to taste
1 slice of bacon, crumbled
3-4 grape tomatoes, sliced
1 small slice of sharp cheddar, diced
1 green onion, sliced

Directions:

Sharp Cheddar, Avocado, and Tomato Panini

My daughter was home sick this week so I wanted to make her a special lunch to make her feel better. She has recently discovered a love for sharp cheddar and pepperjack cheese which is exciting for me because she hasn’t liked cheese for years. I made this tasty panini with some leftover roasted garlic bread that I had leftover from our dinner the night before and I layered it with sharp cheddar, tomato slices, and avocado. It was a hit with my daughter and she gobbled up every single bite.

Preheat your panini grill or a grill pan over medium heat.

Spread some of the shredded cheese on the bread then layer it with tomato and avocado and season with a bit of sea salt and freshly cracked pepper before adding a little more cheese. Place the other slice of bread on top.

Place into your panini pan (or grill pan).  Cook for 5 minutes or until crispy and golden brown.  Serve immediately.  Enjoy!

Side Note:  I always cook my paninis dry.  I find that using oil or butter on the bread makes the sandwich too greasy.  Try it – I bet you will like it and it’s way better for you!
