Baked Barbecue Ribs

I took my kids to the grocery store after I picked them up from school to pick up some things for dinner. I planned on making barbecue chicken breasts but they both saw the ribs and asked me to make barbecue ribs instead. I seasoned them simply then wrapped them in foil and baked them for an hour. I unwrapped the ribs then slathered them in barbecue sauce and put them back in the oven to bake for another hour. The ribs turned out tender and so flavorful. We all enjoyed them – especially my husband who took the leftovers to work today. I served these ribs with the Roasted Asparagus with Garlicky Italian Panko[1] and a spinach side dish that will post tomorrow.

Preheat the oven to 350 degrees. Line a baking sheet with tin foil (for easier clean up).

Remove the silverskin membrane from the back of the ribs. See how to do it here[2]. Spread the minced garlic evenly over both sides of the ribs. Season, to taste, with sea salt, freshly cracked pepper, garlic powder, onion powder, and paprika evenly over both sides of the ribs. Place the seasoned ribs on a large piece of foil then top with another piece of  foil and roll all of the edges to make a sealed packet. Place on the baking sheet and into the oven and bake for 1 hour.

Carefully, open the tin foil packed ribs then slather with your favorite barbecue sauce. Place back into the oven, unwrapped, for another hour. Remove from the oven and place on a cutting board. Let them rest for at least 5 minutes before slicing them and serving. Enjoy.

Baked Barbecue Ribs




Prep Time: 5 min.

Cook Time: 2 hours



Ingredients:

1 pack of baby back pork ribs
3 cloves of garlic, minced
Sea salt and freshly cracked pepper, to taste
Garlic powder, to taste
Onion powder, to taste
Paprika, to taste
Barbecue sauce

Directions:

I had heard that some sauerbratens were finished by
thickening the sauce with ground gingersnaps, but had
never tried it since it just sounds so wrong. It certainly doesn’t seem very
German. Cookies in a sauce? What’s next, laughing in public?


Anyway, I’ve had a lot of “do something German!” food wishes
lately, and since I’ve wanted to post another short ribs recipe, this seemed
like the perfect opportunity to go full cookie. The results shocked and amazed
me. This was comfort food at it’s finest.

The 24-hour marinade ensured the succulent rib meat had that
signature tanginess, and those little cookies not only gave the sauce a
beautiful texture, but also added a great spicy sweetness. I am now officially
in favor of using cookies to finish savory sauces.


With cooler weather on the way, it’s time to rediscover the
simple joy of slowly stewed meat, and what better way than with this delicious

Ingredients:
For the marinade
3 lbs short ribs, seasoned with salt and pepper
1 tbsp vegetable oil
2/3 cup cider vinegar
2/3 cup red wine vinegar
1 1/2 cups water, plus 1 cup cold water at end to cool
marinade down
2 bay leaves
9 whole cloves
12 juniper berries
1/2 teaspoon freshly ground black pepper
1 tablespoon salt
*Marinate at least 24 hours
Then stew with:
1 chopped large onion
1 chopped carrot
2 ribs celery, chopped
3 cloves garlic, minced
1 cup water
1 cup chicken or beef broth
2 tablespoons sugar, or to taste
1 tablespoon balsamic vinegar
1/2 cup crushed gingersnaps
salt and pepper to taste
